Key Lime Pie VII

Easiest and best recipe! Why would you make it more complicated when you don't have to? I would probably add more zest next time just for more zing, but this recipe is perfect. I doubled the amounts for two pies.

Momma's Sloppy Joes

Thought it was delicious and my kids loved it. I, too, added onions and chopped yellow pepper as well as some garlic powder to the mix. Omitted the sugar and it was plenty sweet. Will certainly put this in the family rotation.

Salmon with Pineapple Tomato Salsa

The salsa was incredible!! I would even make this salsa just to serve with tortilla chips. Definitely keep the salsa cold and as an aside. Everyone in our family ate it up! I did use a white onion instead of a shallot, and it was fine.

Creamy Au Gratin Potatoes

Delish! I sauteed the onions first and added a lot more cheese on top. Didn't disappoint. And cooked longer than recommended.

Banana Pudding I

This was FABULOUS! My kids devoured it and my husband loved it. I did use about 1/2 cup of half and half in the milk portion and added an extra egg yolk. Will definitely make again.

Grandma's Sloppy Joes

My family loved this and I have some picky eaters! I used a sweet red pepper since I didn't have a green one, and only used 1/4 tsp of the cloves, which made it perfect. I only had about 3/4 of a cup of ketchup, and I think that was fine. I used organic, which has WAY less sugar. Anything sweeter would have been way too sweet for us. We will definitely put this on the dinner rotation!

Whole Grain Pancakes

These were fabulous! I was very skeptical about the corn meal, but it added just a touch of sweetness and great texture. Even our pickiest kids, who only like the light n fluffy pancakes, devoured these. We did add a touch of vanilla to the mix and added more liquid to make the batter a little thinner. We used the powdered buttermilk stuff, and will hopefully have the real deal on-hand next time. Also ground the oatmeal in a mini processor, which helped hide the whole grains from the kids. Love these!

Roasted Beets and Sauteed Beet Greens

So glad we know we can cook the greens as well as the beets now! I ended up with more beets than greens and would prefer more greens. They were truly delicious. I'm eating the leftovers cold tonight with a splash of balsamic vinegar, goat cheese and toasted walnuts. This was very good.

Cucumber, Tomato, and Red Onion Salad

It's about 100 degrees here today, and this is exactly what I want to eat on a day like today. So cool and refreshing! I did add the feta as I served it in the bowl as our son doesn't care for it. Added a few tblspns. of EVOO and just a splash of vinegar but did not have lime. Might add a bit more vinegar. It gets better as it sits in the fridge!

Preacher Cookies

We always called these "diaper cookies" (I know...), so it was nice to learn the real name. These were delicious! Wish there was a way around so much white sugar, but I figure the peanut butter and oats are healthy. I do cool mine in the fridge and keep them there.

Spinach and Leek White Bean Soup

Loved this! We, too, used the rosemary and thyme in place of the cumin. Omitted the couscous all together. I ended up putting a small spoonful of plain greek yogurt in my bowl, which gave it a creamy yet tangy flavor! So easy and fast - this one will be a keeper.

Thai Ground Chicken Basil

Great flavor! I used chicken tenders instead of ground chicken and realized halfway through making that I didn't have fish sauce, which would have made it even better. I did add broccoli florets to steam near the end and served over brown rice. Everyone cleaned their plates! I went lighter on the chiles due to the children, but would love the heat for just me and my husband. Will make again!
