Microwave Oven Peanut Brittle

First time making peanut brittle, and BAM! it worked perfectly! I followed others suggestions to not put peanuts in until about 3-4 mins cooking time. I also used foil, but next time will try the wax paper to line the tray. I poured it out onto a cookie sheet and it filled up about 3/4 of the pan. My husband pretty much munched on it the entire night. He loved it! This is a completely easy and fast recipe!

Baked Macaroni and Cheese III

I tried this at a friend's house and loved it! So the next day I made the same recipe. My whole family loved it and kept going back for more (2nd's, 3rd's, 4th's!). So yummy! :) I personally recommend only using cheddar cheese. I used half cheddar and half italian blend and didn't love it as much as I had at my friend's house. I also doubled the sauce because 16oz of noodles can make quite a bit. :) My family of 6 had two-meal's worth!

Chocolate Layered Pie

This is one of my favorite dessert recipes! I seriously can't stop myself from going into the fridge and cutting off small pieces to nibble on. The cream cheese layer is soooo yummy!

Slow Cooker Chicken Stroganoff

This was salty! But maybe it was the seasoning packet I used. It's also very similar to the Slow Cooker Chicken Tetrazzini recipe on this site. The only difference is this one requires you to cut the chicken up first and does not use chicken broth. I always love it the first night, but the flavor is too much the second night, and I beg my husband to eat it so I don't have to.

White Cheese Chicken Lasagna

This recipe was yummy!! But it took me over two hours to make and as another rater said, I used so many dishes to make this recipe. Make sure you use the no-boil noodles. It really does save time and mess. I also used fresh spinach which was very tasty. I sauteed it in some of the butter along with mushrooms and basil. I would recommend only using one bag of spinach. When layered with the mushrooms, it's plenty. I also used cottage cheese for the ricotta. When the recipe states to layer 1/3 noodles, the ricotta, and the chicken, it means ALL the chicken, and ALL the ricotta. I misunderstood and only put 1/3 of each only to find out I had to throw it in somewhere else. I will make this again with my changes which should make the whole meal prep much faster.

Gobble Up Granola Snacks

I put chocolate chips in the mix right away, only for them to melt when I poured in the peanut butter mixture. It still tasted fine, but I really enjoy have chunks of chocolate in my granola bars. You could also use peanut butter or butterscotch chips. This is a great way to use up the cereal (rice krispies, cheerios, ) that has lost its appeal from being in the pantry for too long. :)

Fresh Rhubarb Pie

I forgot to add the butter, but it was excellent without it! You might as well not add the extra fat and just leave it out. This was my first time making a rhubarb pie, and I thought for sure it was going to taste too tart, but it turned out perfectly sweet. Putting the pie on the lowest rack helped the pie crust not to burn. I didn't have to line the crust with foil at all. This was an amazing pie, and I will definitely make it again. And that says a lot coming from someone who doesn't like the taste of rhubarb!

Irish Apple Cake

Wow, this is really good! I used unsweetened applesauce and it still came out tasting sweet. It was not dry at all. I rarely have lemons on hand so I used about 2-3 Tbs lemon juice. The taste isn't as strong as some reviewers say they can taste the lemon zest, but it does add a bit of liquid that helps to keep the dough together. The dough resembles shortening/flour "crumbles". Just grab half of it and mold into a ball, then press into the glass dish. Cover with applesauce mixture, then grab remaining "crumbles" and sprinkle over the applesauce. It should cover the whole pan. Press down lightly, add some cinnamon for flavor and color, bake for 40-45 mins and it turns out incredible. Can't wait to add ice cream!

Perfect Porterhouse Steak

This was so easy! I have always marinated our steaks, so this was the first time I have dry-rubbed a steak. It was delicious! I actually used the Montreal steak seasoning recipe from this site. We will definitely be using this recipe again!

Chicken Pot Pie IX

My kids are always very excited when I make this. I use the Butter Flaky Pie Crust on this site and I add corn and potatoes as well. I also add poultry seasoning and garlic powder. I double the sauce as some others have done and cook it at 375 for 45 minutes (baking bottom crust a bit before adding the filling).

Black Bean and Corn Quesadillas

Wow, the brown sugar makes the recipe! My husband and I loved these! I've made quesadillas with corn and beans before, but they have never tasted this good. I do not use the butter at all. The tortillas get nice and brown on their own.

Quick Elephant Ears

I tried this for the first time tonight and thought it was excellent! I made three ears, one for each of us and each turned out a bit differently. The first one I took out too soon (so not as puffy and a bit softer), the 2nd was perfect, and the 3rd was just slightly overdone. They tasted yummy anyway, but if your first one doesnt turn out right, try again. I think it takes a few times to get the right timing and heat setting. One ear was plenty for each of us - very filling! And cutting it in half is way easier to eat as well. Come to think of it, the 2nd ear was cut in half before cooking, so maybe that's why it turned out so great - it puffed up better.

Butterscotch Oatmeal

This is so easy to make! I also use half the brown sugar, and I always add whatever fruit I have on hand at the end. Sometimes I will throw in raisins and dried apple dices at the beginning so they soften while cooking. I make this at least once a week now, and I had never been an oatmeal person before!

Oven-Roasted Asparagus

When I think of asparagus, I think healthy. I assume healthy means I should steam, which is all I've done with asparagus before. I haven't really enjoyed it that way. But the author is right when she says that the natural bitterness is killed when roasting. I LOVED this recipe! I will be making asparagus much more often now! We added mushrooms to the recipe and they were also fabulous. Thanks so much for posting a healthy recipe that tastes so yummy. :)
