Cheesy Ham and Hash Brown Casserole

I needed something quick and easy for a breakfast we throw for the Graduates in our Student Ministry at my church. I made a double-batch of this and it was DEMOLISHED! Everyone raved about it. So simple and super good! This will be a staple for our annual breakfast. Also - I accidentally bough 2 kinds of hashbrowns, shredded and cubed. I think the cubed came out MUCH nicer than the shredded as far as consistency goes -- both tasted great. YUM! Thanks so much!

Candy Cane Cookies I

These are the same that my mom has been making for 40 + years! The complaints on here are the same ones I've been hearing from her for at least 35 years (LOL). I agree, the size of egg AND shortening make a HUGE difference in how the dough comes out. The dough tends to be a bit on the dry side -- use extra large or large eggs and the dough will be easier work and shouldn't crack so much. I moved to Ohio 10 years ago and mom has tried shipping them to me (they don't withstand the postal service too well), a few years back she just started rolling the dough out and cutting it like a sugar cookie -- they are much more durable and still taste GREAT!

Pear Honey Cranberry Sauce

This was AWESOME! I made this for Thanksgiving dinner. My brother and his wife RAVED about it. They don't generally like cranberry sauce, but they both had seconds. My wife and kids liked it as well. I did follow the suggestions of others to cook in orange juice instead of water, I also cooked the berries first and let them "pop" in the orange juice and sugar. I simmered them for about 10-15 minutes before adding the pears. The pears and the honey go VERY nicely with this sauce. Also, my wife really wanted some oranges in the sauce, so I chopped up an orange and added it when I added the pears. This was VERY YUMMY. I mixed up another batch for Christmas dinner, too!

Taco Seasoning I

This is very good - but I'd make a few changes next time I make it. I would used dried, minced onion instead of the onion powder, double the cumin and substitute a pinch of cayenne for the pepper flakes. Also, I like how the packaged kind thickens up a bit, so I added a tsp or so of cornstarch to the mixture. I LOVE that it is all natural and NO MSG!!!

One Skillet Corned Beef Hash

This was a good recipe. I was looking for a quick, easy corned beef hash recipe -- this was it! I actually made it a little EASIER. I had some leftover boiled red potatoes from my St. Patrick's Day corned beef. I figured why not dice them up (along with a few more that I quickly boiled in the pot after that meal was over) and see if I can do this a little more quickly and not have to really cook anything but the onions! My children were very suspicious about this "hash stuff" -- but once they took a bite, they were hooked! I did cut back on the vinegar (per other user's suggestions) and used my leftover corned beef (not canned). I also found that one big onion was sufficient. Overall, a very tasty meal to make with my leftovers! HURRAY!
