I'm a Youth Pastor in Ohio, grew up in Silicon Valley. I've got 4 little "buckeyes" that are a big part of the joy of my life. My bride and I have been married almost 19 years. Life is good.
My favorite things to cook
Home cooking - pot roast, mashed potatoes, roast chicken. Like "meat & potatoes" meals. I also really enjoy Mexican and Indian cooking. My in-laws are from India and Mexico -- they have inspired me to learn to make authentic dishes from their countries of origin.
My favorite family cooking traditions
Special breakfasts of waffles or crepes (like my grandmother and mom used to make), turkey dinners with all the trimmings. YUM!
My cooking triumphs
I have become the king of the pressure cooker -- lots of my dishes involve the pressure cooker. I can make authentic refried beans from dry beans in a little over an hour. Mashed potatoes that have been pressure cooked come out nice and fluffy!
My cooking tragedies
I am NOT a good multi-tasker. I've been known to start something, move on to something else and COMPLETELY FORGET about the first thing! I recently was making a cheese sauce and got involved with my kids at the kitchen table -- fortunately caught the sauce BEFORE it boiled over and onto the burner!

Creamy Potato Leek Soup II
So simple, so delicious! We've made this multiple times and it is requested often by my children, as well as guests we've had over for soup meals

Hot Mexican Spinach Dip
I made this for a party and got rave reviews! I, too, made a couple changes, but only because we try to do things from scratch in my home. First - we NEVER use canned refried beans (especially since in an hour and a half they can go from dried beans to finished refrieds - pressure cooker). I subbed 4c fresh for 2 cans. Also - we make our own taco seasoning found on this site - I put 3-4 tablespoons of it in. And, I used cheddar and pepper jack. Otherwise I followed the recipe to a T. It was delicious and we came back from the party with an empty dish! Kudos Linda!

Sugared Toasted Almond Salad Topping
Thanks, lovestohost, for the review! I really only put the recipe for myself. GREAT idea about cutting the sugar in half -- I'm definitely going to try that! I like the toasted almond flavor more than the carmelized sugar flavor. I can't keep out of them as they cool, either! They are DELICIOUS on salads - especially paired with my sweet sour salad dressing. I'm in the midwest and we have a restaurant called Max & Erma's that has an AMAZING house salad. It's served with bacon, red onion, sweet sour dressing and toasted almonds. I posted the almond and sweet sour salad dressing recipes so I could easily find them!
