Awesome Broccoli-Cheese Casserole
I'm not a broccoli fan and my family are snobs when it comes to cheese. No velveeta. This was soooo good. I loved it and so did my kids!

This is the same recipe my mom used to make growing up and now I've been making it for the past 5 years. Hint: as with most candy, notice the luster. When divinity starts losing it's luster and your electric mixer seems to be struggling go around the bowl- then it's time to drop. Prepare to beat awhile but be assured it's worth it. Also, I go to 265 and at about 240 is when I leave the syrup and start beating the whites, so they're ready when the syrup is ready.

Tiramisu Layer Cake
I've made this several times and have some suggestions for the ease of the baker....I leave my cakes in pans after baking. Let cool on wire rack for 15 minutes, poke holes with toothpick. Pour coffee/liqueur mixture over cakes and then set in freezer for 20 minutes. Doing this enables the cake to "swim" in the the coffee mixture and also insures the cake won't split when setting it up.
