Weekends are my time to make new dishes happen. Summertime centers around the grill. Charcoal is king, but gas grills are good too. Winter has the crock pot and the oven on many occasions. All have their place in my culinary toolbox. Fresh ingredients and skilled preparation are my focus for a delicate balance of flavors. It's like painting a picture. Composition, color palette (sweet/savory) and overall tone come into play. When it works it's magic!
My favorite things to cook
Grilled Greek butterfly leg of lamb & crawfish etouffee are my 2 favorites.
My favorite family cooking traditions
My Grandmother was from Newfoundland and she was very inspirational to me growing up. Her tastes and recipes are just incredible It's why I love cooking so much today.
My cooking triumphs
There are many
My cooking tragedies
There are many, but mistakes are how I learn. Never make the same mistake twice... in cooking anyway.
