Amazing Chicken

Reviewed: Sep. 20, 2009
This is a great idea, although I do like adding some additional spices to give the chicken some flavor. When I was younger my nana used to coat a chicken breast in a mayonnaise, Parmesan, and spices mixture. This is somewhat similar to that.

Fresh Strawberry Pie I

Reviewed: Sep. 20, 2009
I made this with no modifications, and it came out great. I combined it with a shortbread crust, which I think really complimented the strawberries well.

Shortbread Crust

This tasted great, and was really quick to whip together. It made more than enough for my one pie, probably enough for two.

Apple Crumb Pie

Reviewed: Sep. 20, 2009
This pie tasted fabulous. It was delicious. However, as the pie cooled, it progressively became more wet. By the time I served it, it was impossible to take out of the pan in decent shape. Luckily the taste compensated for the visual presentation.

Quick Creamy Potato Soup

Reviewed: Sep. 19, 2009
I guess I can't review this recipe accurately because I didn't follow it, but I did intend to follow it. As I was starting I realized I didn't have a second can of cream of chicken, and I couldn't half the recipe. So, I substitued the second cream of chicken for a mixture of half and half, sour cream, and shredded colby jack cheese. I also added a little skim milk for consistency. I also added some spices to flavor It came out absolutely fabulous. Also, I noticed some reviewers had an excess of water in their soup after adding the potatos. The key is to add JUST ENOUGH water to the potatos initially. If it is done right, you shouldn't really have much liquid with your potatos by the time they are cooked, but more of jelly type coating.

Chicken Pot Pie I

Reviewed: Sep. 7, 2009
This is a great base recipe for nights when you really don't have a lot of time. I threw the chicken breasts on the george foreman grill while I cooked up some potatoes (I microwaved them, then skinned them). While I was dicing the chicken and potatoes I steamed a bag of frozen veggies. I also diced an onion to add to the vegetable mix. I tossed all of the chicken and vegetables into a large bowl and added 2 cans of condensed chicken soup (after adding one it was clear that it wouldn't be enough) and topped it off with some milk (I didn't bother measuring). The consistency was great, although I had an excess of filling (my fault for adding so many excess vegetables). Next time I'll likely opt for a deep dish pie. Like I said, its a great base recipe, but some personal-preference tailoring is definitely required for it to be a great pot pie.

Quick and Easy Alfredo Sauce

Reviewed: Sep. 7, 2009
I'm constantly trying new Alfredo sauce recipes, as its a favorite in my house, and I despise the jar kinds. This one was really tasty, although I initially only selected it because I had about five things of cream cheese and no cream. The taste really is very good, although I think I do slightly prefer a more traditional Alfredo sauce.

One Bowl Chocolate Cake III

Reviewed: Sep. 7, 2009
The taste of this cake was great. It was just moist enough. I did have some difficulty removing the cakes from the pans, however. I ended up with a mess in the bottom of the pan and not-so easy to frost cakes. Admittedly, this could have been an error on my part. As this was a rushed birthday cake, perhaps I didn't grease / flour the pan quite thoroughly enough. I topped the cake with the mousse recipe from Chocolate Mousse Cake IV and layered it with fresh strawberries. It really was a delicious combination.

Chocolate Mousse Cake IV

Reviewed: Sep. 7, 2009
This mousse was fabulous. I didn't use a box mix, rather I used the recipe "One Bowl Chocolate Cake III". The results were wonderful. I did find the mousse a little difficult to spread, and in the future I may tweak this a little to modify the consistency. The taste though is really fabulous.
