Asian Mushroom Soup

Chef John's Meatless Meatballs

I'm still looking for the calories per meatball. Wish recipes would give the calories for the entire recipe and when I make 20 or 25 meatballs, then I can figure each one. Thanks for a great recipe. I made smaller meatballs and it still took 15 minutes. Easier if you use a non stick surface to bake.

Dill Pickles

I like it better when the water has cooled. Other reviewers agree. I now make the recipe with whatever dill I have and sea salt. The smaller version is 3 parts water to 1 part white vinegar. Ajust sea salt and dill, and garlic. I like to add pickling spice. These don't last very long inour house. I like them the next day too.

Marrakesh Vegetable Curry

My husband and I loved this. I only used 1/2 the oil and didn't have spinach so used kale. 2nd time I made this without zucchini, almonds, and spinach, and added cauliflower, roasted peanuts, and 3 T raisins.

Fennel Cucumber Salsa

great recipe as is. I have made it several times. it is forgiving with substitutions like parsley instead of cilantro, no avocado, added drained and rinsed black beans, pickles instead of peppers. A keeper. thanks for sharing.

Curry Stand Chicken Tikka Masala Sauce

Similar to our Indian restaurant. I have discarded other recipes and for now will use this one. I am pretty sure the heavy cream is a must. I have inquired at several restaurants for this recipe... they all mention ground almonds and chicken marinated in yogurt. I might tweek this next time. Thanks for sharing this recipe.

Baked French Fries I

Heat oven to 450' Line jelly roll pan w/ parchment paper. Put 1/2 t each paprika, garlic, chili, & onion powder seasoning together so you can shake it on or sprinkle with your fingers. Slice large potato for french fries. Place on parchment paper using 1 T olive oil in hands - toss the fries. Then shake seasoning over all. Added garlic powder, seasoning salt and black pepper at the end of baking. Turn oven to 425' & flip over w/ spatula at 1/2 time. Watch 15' before done and check every 5'

Grampa's Coriander Turkey Sausage

I love this recipe. Have made it a number of times and now use it in my lasagne that calls for sausage. We can't have too much salt so I cut the salt. We really like fennel and now I add 1 1/2 tsp of fennel. If you don't like it too spicy hot, I suggest you halve the cayenne and add more if you like. My non stick pan handles this without the oil.

Shrimp Scampi Bake

Hesitant to make because I wasn't sure about the Dijon mustard but it was wonderful AS IS. I did butterfly the shrimp so each shrimp had more sauce and then they cooked in the least amount of time. Also used non salted butter and didn't find it necessary to add additional salt. Buy good shrimp like from the Gulf shrimp and you won't be disappointed.

Roasted Vegetables

A+recipe-TY! 2nd time around you can change it up and add more vegetables that are your favorites. Butternut squash is fabulous in this dish. My potatos were not Yukon and took more time. I added fresh carrots and we loved the carmelized onion so used two. Used a large roasting pan and dish was not quite done- turned the heat down and covered for about 30 more minutes. A wonderful addition to my favorites.

Bramblett's Vegetable Stock

Great recipe. I put the stock in a plastic bag after freezing in my 12 size cupcake pan. Cool and freeze larger amounts in a plastic bag or freeer container. Next time I will have 2 pots going so I can double the recipe.
