We really liked this! I'm guessing if I'd followed the directions exactly it would have been even better, but I realized after I started that I didn't have cilantro or water chestnuts. I also used chicken broth rather than vegetable.

Jamie's Black Beans and Rice

We really enjoyed this! Used 2 chopped yellow peppers and a small sweet diced sweet onion. Instead of a can of enchilada sauce used 10 oz of tomato juice and 2 Tbsp of chili powder. Made with brown rice.

Couscous Gourmet

Very simple, but tasty. Didn't have the couscous with flax seed so substituted whole wheat couscous with a roasted garlic and olive oil flavor. Used orange pepper instead of red. Omitted butter.

Benji's Pork Chops with Grapefruit Relish

Oddly, my review is the exact opposite of the previous reviewers: the pork was good and the relish was awful. It may have something to do with the fact that the previous reviewer reversed the use of orange and grapefruit. I also halved the salt. I think this would probably be excellent if the grapefruit was omitted altogether and oranges used in their place.

Strawberry Shortcake with Balsamic

Wouldn't make this again. The balsamic vinegar was extremely overpowering. I like the idea, but if I were to do something similar I would probably use more sugar and make a balsamic reduction rather than the way it is prepared in this recipe. The cake, however, was WONDERFUL on the grill. Did not take anywhere near 3 minutes on each side on a charcoal grill, though, so keep a close eye on it.

Grilled Vegetable Salad

This wasn't terrible, but we didn't really enjoy it. The tastes of grilled veggies are so wonderful on their own, the vinaigrette really masked and overwhelmed their flavors.

Appalachian Slaw

This is how I make my slaw, with a couple of changes that make a big difference- omit the tomato and add a couple tablespoons of apple cider vinegar. Delicious!

Corn with Bacon and Chili Powder

Peanut Butter Popcorn

My husband and I enjoyed this. Instead of cooking the peanut butter mixture in the microwave, cooked on the stove. Brought mixture to a boil for several minutes, stirring continuously. Removed from heat and stirred in 1 tsp baking soda and 1 tsp vanilla. Baked at 200 for 45 minutes, stirring every 15 minutes. Turned out onto waxed paper to cool. Definitely let popcorn cool COMPLETELY. The popcorn that had only cooled for about 5 minutes was kind of like a rice crispy treat, but after 20 minutes was harder like caramel corn.

Citrus Chicken Supper

This recipe has a lot of potential, but as is it doesn't quite hit the mark. If I were to make this again I would probably double the marmalade for a sweeter, tangier sauce. I might also make more sauce so that it doesn't just coat the chicken but flavors the rice as well. The chicken was a little overcooked after being cooked fully before cooking the last 10 minutes. Next time I would probably not cook chicken completely before covering.

Mom's Wonton

These are ok, but they're certainly one of the least flavorful wontons I've had. If serving as a fried appetizer rather than in a flavorful broth they will require a strongly flavored sauce to accompany them. The egg white is really not necessary, wontons can be sealed just by wetting the edges of the wrapper.
