Amazing Muffin Cups

These were very good! I have a ton of shredded zucchini from the garden that I froze for later use- I lightly salted it and let it drain in a colander for about an hour and then subbed it for the hash browns, worked perfectly!

Great recipe and I love how easily it can be adapted with whatever ingredients are on hand- I switched out cooked pieces of Johnsonville Hot Italian Sausage Links for the smoked sausage!

Perfect Cauliflower Fritters

These were quite good. Full disclosure, I didn't stick to the recipe exactly as far as the cooking method, but I did stick to the ingredients list other than subbing garlic salt for regular salt. Rather than adding milk (I left it out) and pan-frying, I upped the parmesan to 1/4 C and ran all of the ingredients through the food processor. I spooned the mixture onto a greased baking sheet and flattened into nugget-like shapes. I baked for 15 minutes at 350 and then flipped the nuggets and baked for an additional 15 minutes before serving with a dipping sauce made of sour cream (the bacon and green onion flavors reminded me of a baked potato!), sriracha, black pepper, and a tiny bit of lemon juice. Delicious!

Best Pecan Sandies

WONDERFUL! I think "dashes" should be "cups" as I ended up using a little less than 1 1/2 cups- just enough to pull the dough together into a relatively manageable log. My whole family loves them and has gobbled them up!

Bacon Cheeseburger Dogs

The idea is great, but in reality there were some issues- mainly that even in a roasting pan the bacon didn't crisp up. Kind of gross, soggy bacon wrapped around ground beef. I'm thinking that pan frying them might solve that issue? Other than that, neat idea!

Delicious! A great, simple recipe for basic tuna salad- just wrapped in a tortilla. I used albacore tuna and added a little black pepper and mustard. Great lunch!

This was fine, the flavors were ok- personally I would back off of the ranch dressing and up the mushroom and onions as they got a little lost in the sauce. I disagree with the "crustless quiche" comparison made by other reviewers as there was nothing remotely quiche-like about the way this baked up. The chicken pieces were very much in a sauce- 24oz of ranch dressing is a LOT and even 3 eggs won't make this a quiche. Nonetheless, the flavor was decent. A decent meal, though not good enough to repeat.

Deviled Eggs Chesapeake

I really expected more from this recipe. The Old Bay is just way too much- it overpowers the delicate crab meat. I would add a little salt and pepper to the mixture and save the Old Bay for sprinkling over the finished product. The eggs should be mashed separately and the crab meat folded in to avoid losing that delicate texture in the egg mixture. That amount of Old Bay was really bad.

Corned Beef Cheese Ball

We enjoyed this! I upped the nuts to a cup and made 8 personal-size cheese balls. They freeze well to put in lunches later with crackers. Next time I would up the horseradish a smidge and follow Pam's suggestion with the mustard.

Broccoli and Cheddar Nuggets

What a great side for dinner these were! I pulsed the broccoli in a food processor before mixing with other ingredients. They are a little bland by themselves but PERFECT with a dipping sauce. YUM!!

Salmon with Dill

We enjoyed this, though I did switch the recipe up a little while keeping the flavors pretty much the same. I cooked on stovetop rather than baking. I mixed all seasonings into butter and added 1/2 tsp of lemon butter. I smeared the seasoned butter over the flesh-side of the salmon while the skin side was down. After 4 minutes I flipped the salmon to flesh-side down. Flavor was outstanding.

Taco Bell® Seasoning Copycat

Simple seasoning mix that is a fairly accurate recreation of Taco Bell seasoning. Added olive oil and sriracha and made into a marinade for fajita veggies and beef.

Golden Sweet Cornbread
