About this Cook
I'm a stay-at-home mom of two young children and absolutely love to cook. Being named an Allrecipes Allstar has been a thrill and I absolutely love the community of home-cooks I've connected with at Allrecipes!
My favorite things to cook
Bread and ethnic foods. I tend to enjoy lighter fare.
My favorite family cooking traditions
When I was about 8 I asked if I could cook our family's Christmas dinner and my mom agreed to let me. I chose to serve lasagna and mashed potatoes with oatmeal cookies for dessert. The unconventional meal has become a sort of tradition for our family.
My cooking triumphs
:-) Any time I know that what I've made is better than I could get at a restaurant.
My cooking tragedies
I have failed repeatedly at making pita bread and English muffins. Regardless of how simple the recipes look, they never turn out correctly for me.

Buffalo Chicken Stuffed Mushrooms (Low-Carb)
These were very good and a great low-carb alternative. I think next time I will use only blue cheese rather than ranch and possibly up the heat a little.

Fried Cabbage with Bacon, Onion, and Garlic
Sooooo good, definitely a keeper! I used seasoned salt in place of regular salt but otherwise left the recipe alone. Great!

Meatloaf Cupcakes
The meatloaf was EXCELLENT but the sauce was lacking. It was so overly sweet and lacking any balance. I added 1/2 tsp soy sauce, 1/2 tsp roasted garlic powder, 1/4 tsp black pepper, and 1/4 tsp seasoned salt. Next time I'll cut the sugar way back, at least in half if not more. I would recommend using thicker potatoes for this as I tried to be lazy with instant potatoes and they never really set up on top of the "cupcake."
