Chef John's Italian Meatballs

LOVE these!The one thing for this recipe (which is to die for) - definitely use the fresh parsley. It sounds so minor, but it makes a huge difference in the aroma and flavor of the meatballs. Also - the second time I made them I put them too close together on the pan and they didn't bake the whole way through, so cut one open before you turn off the oven.

Amazing!!! I used skinless chicken breasts, and then added some garlic with the mushrooms (I don't know how to cook without garlic!). Cooked on the low side (15 minutes in oven) and it came out perfect and delicious!

Mexican Rice II

I LOVE this recipe! Made it for the first time for Cinco de Mayo, and the minute everyone took one bite they were raving about it. I doubled the recipe but left the oil as is, as I was trying to make it a little bit healthier. I used plain garlic powder for the garlic salt and just put a few grinds of sea salt in, and I used 1 T of dried minced onion in place of the chopped onion. Very very very good.

Eggnog Thumbprints

This cookie was DELICIOUS - we made it for our annual cookie bake this year, and this is definitely going to become a staple. EVERYONE in our family loved these cookies. We used a pastry bag for the filling and it worked wonderfully and made the cookies look even more beautiful.

Southwestern Egg Rolls

This was amazing - I used egg roll wrappers instead, put in a pound of chicken, and I ended up with about 25-30 egg rolls. For the chicken though, I cut it into 1 inch cubes and seasoned it with chili powder, garlic powder, EVOO, and sometimes a little sriracha sauce and let it marinate before I cook it, then I dice it up. It adds a LOT more flavor that way. I also followed another reviewer's idea of leaving out the spinach. I also make just the filling and then add a dash or two of soy sauce and roll it up in taco shells and eat it for dinner all the time :)
