Couscous with Olives and Sun-Dried Tomato

I am guilty of not making this as written, so read my review with that in mind. This dish was very popular at a table with 6 year olds, 20 year olds, 50 year olds, and 80 year olds. Everyone liked. That being said, I did not make the "add-ins" as a sauce. It was just less time to skip that step entirely. I made the pearl couscous, added chopped black olives and sun dried tomatoes, feta cheese, pressed the garlic, skipped the shallots having none on hand, and at the very end, added the pine nuts. Tasty. I'm sure the original way is very good, this was just easier. Pearl couscous is very forgiving. Doesn't get mushy easy. Have made this twice already. It's a keeper.

Cheesy Quinoa Pilaf with Spinach

I thought this was surprisingly delicious. I'm not fond of cheesy vegetarian dishes, and this was tasty without being heavy. My children both pronounced it as "disgusting" (as they usually do), but once they tasted it gave it two thumbs up. Used parmesan cheese and pine nuts because that is what I had. In my recipe box to make again.

Quinoa with Chickpeas and Tomatoes

Everyone liked this dish and I served it to a wide range of people at dinner. I used fresh coriander rather than parsley as I had none on hand. I cooked the chickpeas and tomatoes in the quinoa for a bit to have the flavors meld. I cooked the quinoa in vegetable broth not water I used at least 3x the amount of cumin required and put in a pinch of red pepper. I kept tasting the dish saying it was tasteless and kept adding ground cumin until it registered. I'll make it again, very popular at my house, but 1/2 tsp cumin is not enough!

The Best Rolled Sugar Cookies

Very reliable recipe. I have made it following it to a T and also eggless. To make it eggless I used the Ener-G egg replacer. I do not think the cookie tastes as good made with egg replacer and I think the dough seems a little tougher, but if you cannot eat eggs still makes a decent cookie. Making rolled cookies is a pain but the kids enjoy it so much. Highly recommend. Cut easily, taste good. Try it!

Seven Layer Bars

Crazy sounding review maybe -- I don't like these bars -- but I make them for others who really love them. If you do not like sweet cookies then stay away from these. Like other reviewers I melt butter and mix with crumbs before pressing in to pan. Oldie but goodie recipe.

Downeast Maine Pumpkin Bread

Sure fire recipe. Well liked. Made it in small paper mini-loaves at Chistmas. One batch made 5 loaves for me. I go a little heavy on the spices but that's just my preference. Hard to go wrong with this recipe.

Overnight Coffee Cake

This coffee cake was enjoyed on Christmas morning. Met my needs for simple, do ahead. The cake is small however, 1 cup of flour. I'd recommend doubling it as other have suggested to make a more substantial cake. I was heavy handed with the cinnamon because I like it a lot. Finished product had nice flavor.

Too Much Chocolate Cake

I made this cake at this last minute on Christmas Day. My favorite flavor is vanilla and this was not my go-to cake recipe but I figured others might prefer chocolate. Cake turned out great, everyone loved it. Dusted it with powered sugar. I noticed that my devil's food cake was a 15 oz box and my chocolate pudding around 3.4 oz, so I just roughly scaled everything down - 3 eggs not 4, 2/3 cup oil and so on and it came out fine. Substituted buttermilke and butter for the sour cream. A very forgiving recipe!

Rosie's Bok Choy Salad

I've lost my original recipe for this salad so rely on this version as a guide. I use sunflower seeds not sesame seeds. I make the crunchies in the oven not on the stove top, short the olive oil a tad, and add more soy sauce. Do not hesitate to use hearts of romaine if you are out of bok choy. I think romaine works fine and is sometimes more palatable depending upon how adventurous your audience is. Worth making again.

Apple Avocado Salad with Tangerine Dressing

Very tasty salad and salad dressing. All the components played well together. I used butter lettuce, nearly double what the recipe called for and substituted goat cheese for blue as that is what I had on hand. Fresh tangerines make this recipe. I used bottled orange juice in one prior attempt and it was lack luster. Squeeze the tangerines. You'll be glad you did. Definitely a keeper.

Artichoke Spinach Lasagna

This recipe hardly needs any more reviews! I've made it twice in December and delicious both times. What makes it particularly good is that it isn't laden with cheese so you don't feel like you have lead in your stomach when you are done dinner. The artichoke flavor is nice and comes through consistently. I've made it as written and also modified it to double the spinach and add mushrooms. Next time I'll double the artichokes. A crowd pleaser. Highly recommend.

Vegetarian Stuffed Poblano Peppers

I was skeptical but this dish was flavorful and easy to make. I'll probably make it again. I roasted the peppers before stuffing them and baking them and I topped them with some shredded cheddar.

Simple Savory Quinoa

I made this according to the recipe and it was far too bland for the adults. I'd have to double the spices to get any flavor. It passed muster with the five year olds however. I struggle to find something to make with quinoa that really tastes good. I'll probably not make it again.
