Easy Mexican Casserole

Reviewed: Feb. 26, 2013
This is so... for my family, we loved it! Like many others I did make a few changes. In lieu of chips I lined a 9 x 13 dish with 2 layers of corn tortillas,. I heated/browned them over a gas flame, used a dozen. As others I added a can of drained corn. I also added a package of Taco Seasoning to the ground beef. Drained off the excess fat, added the drained beans and corn and salsa. After layering the beef mixture over the corn tortillas, I spread the sour cream and sprinkled the shredded cheese ( I used a combine mixture of sharp chedder and Jack). I than added the chopped tomates, chopped green onions and sliced black olives, I thought the presentation would be better, then just a layer of cheese. I was right! This was so great because I normally have everthing in the house. This will also be good for a large group, I know I will be making it for a church potluck!

'Out of Salad Dressing' Salad Dressing

Reviewed: Jun. 8, 2012
I have been making this dressings for a long time, in facts my kids like it better than any bottled stuff. My version is: 1cup mayo, 1 freshly squeed lemon, salt and pepper to taste, 1 clove of pressed fresh garlic. Mix well, chill while you prepare the rest of your meal. Toss and serve.

Angel Food Cupcakes

Reviewed: Apr. 3, 2012
Angel Food cake is my #1 favorite! When I was a kid every year for my birthday, my mom would make an angel food cake, slice it into four layers, and frost with chocolate heavy whipped cream, by folding in Hershey's Chocolate Syrup into the whipped cream, then add sliced almonds to the sides and top of the cake. YUM! I will be making them as cupcakes for my Easter dinner.

Old Fashioned Mac and Cheese

Reviewed: Dec. 21, 2011
I loved this mac 'n cheese! and so did my Church! Shortly after a wind storm, the electricity had been out for a number of days, and on that following Sunday, I made this for a luncheon at the Church for 40 people, it was so cold outside (for Southern California), this was a GREAT comfort food for all . Thank you so much to JAYDE175! The only item I changed was the processed and/or Velveeta cheese, I do not like either one of them and used 1 pound of sharp chedder grated cheese (I like my mac and cheese, cheesy). I love the swiss cheese (one of my favorite cheeses). I omitted the onion. I am making it again (as a request) for another Church function.

Italian Sausage, Peppers, and Onions

Reviewed: Apr. 7, 2011
This dish was so easy to make and quick too! The sweet Italian sausage was a nice change from beef and chicken. I took the advise from other reviews and added a can of crushed tomatoes with basil, added sliced fresh mushrooms and served over penne pasta. My family and I loved it. My 2 sons went for seconds!

Golden State Mushroom Soup

Reviewed: Oct. 7, 2010
OMG, this was the BEST! It is so easy to make, and takes no time at all. Both my sons and my husband like it to, my 9 year old had seconds. I followed the recipe, but added garlic, and about 1/4 white wine. Will make again and again now that fall and winter are here.

Creamy Hot Cocoa

Reviewed: Oct. 19, 2009
I love this hot coco, I have always made it on an individual basis, 1 heaping teaspoon of coco powered, 2 heaping teaspoons of sugar, a pinch of salt and mug full of milk. No water, nor half & half, however, I like the idea of vanilla. This is a Christmas morning favorite for my two sons. Will let you know how the vanilla goes with the boys.
