About this Cook
I do love to cook, infact; my friend from our Church and I have started a catering business, called: "The Church Ladies Catering Service", and hopefully by Thanksgiving 2010 we will have our web page up. We started about 6 months ago, and so far have done faily well. Wish us Luck!
My favorite things to cook
Anything for my family. I have two sons,who always say,your "whatever" is better! If there is a potluck at Church, the boys always asked what I made, if the same item is out, because (according to the boys, mine is the best).
My favorite family cooking traditions
I have hosted Thanksgiving for the past 4 years, since my dad has passed away, and I just love it, the house is filled with friends and family, at time my table has had up to 20 people. My boys tell me this is the best holiday, as they love all the folks around our table. What a Blessing!
My cooking triumphs
The catering jobs have been GREAT!, We have never received a bad review, our customers are always greatful, and full of commentiments. Our recipes have been requested, what more can we ask for?
My cooking tragedies
Not any tragedies these days. In past I am sure that I had a few, I would read a recipe, not try it out on my husband, make the dish for guest, and end up ordering pizza. I am thankful, that now when I read a recipe that I know when it sounds and TASTE good.

Jam Filled Butter Cookies
First off, i want to thank MKHG. I have an 18 year old son, who has friends over all the the time. I wanted to give the boys a treat and found this recipes. I changed it to what I had in my kitchen: 1/2 cup butter, 1/4 cup cream cheese, 1/4 cup powered suger, 1/2 cup white sugar, 1 teaspon vanilla, 2 whole eggs, beat well, add 1 3/4 cup flour, beat and add a 1/2 teaspoone salt. Drop onto agreassed cookie sheet, make an intent, and fill with a 1/4 teaspoon of jam. Bake 375 for 10 minutes. Dush with powered sugar.

Easy Mexican Casserole
This is so... for my family, we loved it! Like many others I did make a few changes. In lieu of chips I lined a 9 x 13 dish with 2 layers of corn tortillas,. I heated/browned them over a gas flame, used a dozen. As others I added a can of drained corn. I also added a package of Taco Seasoning to the ground beef. Drained off the excess fat, added the drained beans and corn and salsa. After layering the beef mixture over the corn tortillas, I spread the sour cream and sprinkled the shredded cheese ( I used a combine mixture of sharp chedder and Jack). I than added the chopped tomates, chopped green onions and sliced black olives, I thought the presentation would be better, then just a layer of cheese. I was right! This was so great because I normally have everthing in the house. This will also be good for a large group, I know I will be making it for a church potluck!

'Out of Salad Dressing' Salad Dressing
I have been making this dressings for a long time, in facts my kids like it better than any bottled stuff. My version is: 1cup mayo, 1 freshly squeed lemon, salt and pepper to taste, 1 clove of pressed fresh garlic. Mix well, chill while you prepare the rest of your meal. Toss and serve.
