Pat's Mushroom Saute

YUM!! We absolutely loved this mushroom side dish. Didn't change a thing! They were flavorful, beautiful, and oh so easy! The balsamic really adds that perfect touch. I slow sauteed my thick-cut mushrooms (it took about 20 min.) and they really soaked up that rich, buttery glaze but still had a little firmness -- just how we like them! The key is to saute until they reach your desired tenderness, no matter how long. Thank you for sharing this great recipe! It's a keeper! :)

Orzo with Parmesan and Basil

We love this dish! I've never had to change any quantities and it always comes out perfect. Gotta love that! I've also made this with dried basil (1/2 tsp added while simmering) when I don't have fresh basil on hand. It still comes out pretty good, but this is one of those dishes where the fresh herb makes it perfect, so don't pass on it! Thank you for sharing this great recipe! We've enjoyed it on many occasions and it's one of my favorites. :)

Grandma's Chicken Chardon

Wow! Mushroom-lovers: make this. It is delicious! The aroma that fills the house while this is in the oven is incredible! I only had 2 large chicken breasts, so I halved the recipe (everything except the egg). This chicken came out extremely moist & tender. The bread crumb crust is perfectly golden & crispy, but the absolute star of this dish HAS to be the mushrooms. If you like mushrooms like we do, you'll love this dish. We were fighting over the last spoonful! Thank you so much for sharing this recipe! I'll be making this again for sure! :)

Simple Lemon Herb Chicken

This is a fast, flavorful, & fabulous way to cook chicken for a quick go-to dinner. With the lemon tree in the backyard, I'm always keen on recipes with fresh lemon. We like to use other herbs in place of the oregano to change it up, too. Thyme is an excellent option. Slices of this delicious chicken on top of a fresh salad w/ choice of dressing is always a hit at our table for two. Thanks for sharing the recipe! :)

Insalata Caprese II

This is pretty tasty as written, but instantly goes into 5-star deliciousness category with a swift drizzle of balsamic glaze or a homemade balsamic dressing. Quick, fresh, satisfying, and gorgeous. Get the best fresh mozzarella you can afford for this beautiful salad. It's worth it! :)

Rustic Round Herb Bread

Thank you for this very quick, very easy, very pantry-staple-friendly bread recipe! I needed something fast to go with our soup dinner and this was the ticket. Didn't change a thing about the recipe and we loved the savory flavor of this bread. It turned out a beautiful bread with a crispy golden crust. The crumb had a consistency that was like a cross between a cheesy biscuit and a yeast bread. The following day, I was also able to cut slices of this loaf to throw in the toaster to "re-heat" for our leftover soup. Thanks for this great recipe! Will make it again and again! :)

Pasta e Fagioli a la Chez Ivano

This soup rates up there with those we've had at fancy Italian restaurants. Followed the directions exactly and the only thing I modified from the ingredient list was elbow macaroni instead of ditalini pasta (what I had on hand). Half the recipe made more than plenty for the 2 of us for several meals. Leftovers are even BETTER the next day! Absolutely loved this delicious soup! It will definitely be one of my "go-to" meals. Thank you for this keeper of a recipe. :)

Microwave Corn on the Cob

Two ears, 6 minutes, PERFECT corn on the cob! No fuss, no waiting for water to boil, no wasted water! I tried it like the recipe the first time and it worked great! The second time, I left the husk on with the ends trimmed per other reviewers & it worked even BETTER! No wasted paper towels. :) Thank you for sharing this simple recipe for quick & easy corn on the cob! A keeper for sure!

Cream Cheese Dessert Wedges

Very easy & SO delicious! These turned out great with perfect flavor, creamy texture, & nice golden crust! I doubled the cinnamon sugar & used half of it to sprinkle on the biscuit dough before the first baking. Didn't change anything else. Do give the batter a quick swirl with a knife before baking for a pretty pattern on top. We loved it warm from the oven with breakfast - tasted just like a cream cheese danish! We also loved it chilled for after dinner dessert - just like cheescake! Will definitely make this again! Thank you for this keeper of a recipe! :)

Oregano Cubed Potatoes

These potatoes are a delicious blend of flavors. The fresh oregano works so well with the lemon juice & make these potatoes a hit at our table. Just a word of advice: I only use 2T of olive oil & it is PLENTY! These potatoes go great with any baked/roasted chicken dish. Thank you so much for sharing this recipe! :)

Whole Wheat Snickerdoodles I

Yum! Delicious snickerdoodles! It's such a delight to be able to use whole wheat flour & get a wonderful cookie treat! We love these snickerdoodles. I doubled the cinnamon for us cinnamon lovers but kept everything else the same. Just the right flavor & not too sweet. They bake up crispy on the outside & perfectly soft on the inside. Great with a glass of milk! Thank you so much for sharing this recipe! :)

Baked Honey Mustard Chicken

Good honey mustard chicken! I used dijon instead of the prepared mustard & it had a good kick. We found the other flavors to be well rounded & subtle - which we liked. The mustard does stand out, so unless you like mustard, this may be a little strong. I followed the instructions exactly & they baked up beautifully! Thanks for the recipe! :)

Gnocchi with Sage-Butter Sauce

I loved this delicious recipe! The garlic, sage, parmesan, salt & black pepper make a beautiful mix of color, texture, & flavor for this butter sauce. Wouldn't change a thing. This gnocchi was by far the best I've had! Thank you SO much for sharing this recipe! Will be making this again! :)

Beer Brats

THIS is how brats should be done! So simple yet so perfect! Didn't change a thing about this recipe, the kicked-up onions were absolutely delicious, and the brats grilled up fat & juicy & packed with flavor. We don't have an outdoor grill (city dwellers) so I grilled these on my cast iron stove-top griddle/grill & it worked great. We love brats & these are the best BY FAR! Thank you SO much for sharing this awesome recipe! :)

Grilled Garlic Cheese Grits

I pan-fried these grits instead of grilling them (for fear of a grilling mess) & we really enjoyed them! Garlic & cheese are a great flavor combination for grits. The brown crust from frying the grits squares was especially yummy! Next time, will also add jalapenos! Thank you for sharing this recipe! :)

Scrambled Egg Muffins

A great little fun way to serve up hearty eggs. I halved the recipe for the 2 of us & it was perfect for a 6-count muffin pan. These were great even without sausage (wanted to make a vegetarian breakfast). I had 1/4 cup chopped tomatoes to use up so I added them & we loved the result. We enjoyed these along with our cheesy grits. The muffins did stick to the pan a little bit even though I sprayed it pretty good, so next time I'll try the aluminum muffin cups as suggested by others. Thanks for sharing this great breakfast recipe! :)

Chocolate Chocolate Chip Cookies II

Delicious chocolatey cookie! It's very much like a brownie, which suited us JUST fine! Satisfyingly rich & moist with tons of chocolate for my sweet tooth. I used half whole wheat flour & half a-p flour & it worked out great! I also threw in a handful of chopped pecans to use them up & we liked that addition. We love these cookies! Thanks for sharing this recipe! :)

Herb Biscuits

I agree with other reviews that this calls for too much butter! I used 3T and it was plenty! We loved the flavor of parsley, dill, & onion (& 1/2 tsp garlic powder added) in these fun little savory bites. To make this simple, I put the dried seasonings in a ziploc bag, then threw in the biscuit pieces & tossed them around to coat. Then I put them in the pan & poured the melted butter evenly over the tops. Worked out great! Thanks for this easy & quick recipe! Will use it again for sure! :)

Delectable Marinated Chicken

This makes delicious chicken that we really enjoyed! I didn't have liquid smoke, so left it out, but followed all the other ingredients. Great flavor! Instead of grilling (b/c we like large bone-in thighs & I always worry that the outside will burn before it cooks thru), I baked at 375 for 45 minutes. The thighs were so tender and had a gorgeous color. Thank you for sharing this keeper of a recipe!
