Cajun Chicken Pasta

YUM! I am only sad about not having mushrooms on hand because they would have made this pasta dish that much more delicious! We really enjoyed it. I love cajun chicken pasta and this recipe is just as good as some I've had in restaurants. For good cajun chicken pasta, you just have to ignore the calories and do some sit-ups in the morning. ;) Thanks for a heavenly, indulgent, spot-on meal. Will definitely be making this one again!

Cajun Spice Mix

Love having a spice mix recipe readily available for when a recipe calls for something I don't have! Used this for a last minute decision to make Cajun Chicken Pasta and it saved the day. We like the heat! Thanks for the great recipe! :)

Simple Sweet and Spicy Chicken Wraps

10 STARS! Holy moly, this was so fabulous for such a simple recipe. These wraps are to die for and will DEFINITELY be on our menu again and again. For the salsa, I used Pace Thick 'n Chunky Medium salsa. Used whole wheat wraps instead of tortillas and we loved them, loved them, loved them! What a delightful, perfect, fantastic combination of flavors! Nuclear Rich wasn't kidding when he promised to rock our taste buds. Wouldn't change a thing. Thanks for the awesome recipe! :)

Awesome Red Wine Pot Roast

We liked the subtle red wine flavor of this pot roast and would definitely make it again. I opted for the slow cooker on this one, so I bypassed the flour/browning step and just threw everything in the crockpot for 8 hours on Low. It came out perfectly tender with plenty of juice to make gravy. Unlike my usual self, I didn't add anything to the ingredients. It was very flavorful! Thanks for a great pot roast recipe!

Sour Cream Coffee Cake

This coffee cake was beautiful. We absolutely loved it. Didn't modify the ingredients and followed the instructions exactly. Since it's just the two of us, I halved the recipe and baked in an 8x8 glass pan and that worked out great. The cake was so perfectly light, moist, and spongey with the perfect amount of sweetness & flavor. Thank you for the simple, quick, and fantastic recipe!

Lebanese Chicken and Potatoes

I've made this dish a couple times now and it's definitely one of our favorites. We love the tangy flavor of the chicken & potatoes, but 1 whole cup of lemon juice is way too much for our taste. I now only use 1/2 cup. I've made this using either fresh lemon or 100% juice from concentrate and it has turned out great both times. The recipe is tasty as-is, but this last time I made it I also added 1/4 tsp oregano & 1/4 tsp thyme to the seasonings and we really loved the additional flavor. This is a keeper & a repeater in our house. Thank you for the great recipe! :)

Chocolate Banana Bread Pudding

I made this on Valentine's Day for a quick, sinful treat and it was absolutely delicious! Crispy bread crust with a gooey, thick custardy filling packed with banana flavor and swirled with rich dark chocolate. Since it's just the two of us around here, I halved the recipe and baked in two 12 oz. ramekins. I baked in a water bath as instructed (be sure that the water you add is hot). This bread pudding turned out so gorgeous! The only thing I changed in the ingredients was to use only half the amount of chocolate chips indicated (which is not usual for a chocoholic like myself, but it looked like A LOT of chocolate for the size of the bread pudding). I mashed the bananas with the liquid ingredients and would recommend doing so. We LOVED the end result and there wasn't a morsel left. Thanks for this fantastic recipe! Will make it again and again! :)

Slow Cooker Texas Pulled Pork

10 stars would be a better rating for this one. We absolutely LOVED this pulled pork. The flavors are perfectly balanced. The cider vinegar is a must for this type of pulled pork, so don't leave it out. When you add the pork back to the slow cooker, it soaks up all that flavorful slow-cooked juice and is just divine. Do put it back in, you'll be glad that you did. Didn't change any of the ingredients, cooked on low for 10 hours, and look forward to homemade pulled pork many more times in the future. Hubster said it is THE best pulled pork he's ever had in his life. He is a big fan of pulled pork, so that says a lot. Thanks so much for sharing this stellar recipe! :)

Mrs. Sigg's Snickerdoodles

Perfect & delicious snickerdoodles! This recipe makes a ton, though, so be forewarned. I halved the recipe and still got 3 and a half dozen cookies. But we love snickerdoodles, so they won't go to waste. My baking time was about 7 minutes. Had to watch them closely. The Hubster likes the puffier cookies and I like the flatter ones, so I baked half of them as the recipe directed as round balls; the other half I flattened the dough balls with the bottom of a glass before baking. Worked out great and everyone is happy! Thanks for the super recipe! :)

Black 'N' White Bean Salad

Ok, so I made a Black 'N' Red Bean Salad, but that was the only thing I modified (had the red kidney beans on hand). :) This bean salad is delicious, refreshing, and makes for a versatile side dish. We enjoyed it alongside Slow Cooker Texas Pulled Pork sandwiches as I was in the mood for something other than coleslaw. Thanks for the recipe! It's a keeper! :)

Italian Peas

I loved everything about this recipe, except for the cooking of the frozen peas. I recommend putting your frozen peas into a bowl of cold water to thaw for about 20 minutes, drain well, then add to the onion/garlic saute mixture for just a couple minutes to heat through. This way, you'll avoid the wrinkly and mushy look of overcooked frozen peas, and the peas will stay a vibrant green color. The flavor of this dish is great and is a nice change from the same old blah peas. Thanks for sharing the recipe! :)

Baked Mac and Cheese for One

Fantastic, creamy, and satisfying mac-n-cheese with this quick and easy recipe. The Hubster loved it and said it was the best he's ever had. Didn't change a thing and will definitely be making this one again. Since it's just the two of us, I love that I can make single servings and we don't have an enormous amount of leftovers to deal with. Thanks for the great recipe! :)

Healthy Banana Cookies

For a healthy cookie recipe, I don't have too much to complain about it as written. It's a good little snack and plenty sweet. I used craisins instead of dates since we're not big fans of the latter. I think it would be much better with the addition of cinnamon, so will do that next time. Thanks for the good start for a healthy cookie option! :)

Shrimply Delicious Shrimp Salad

As is, this is a delicious, simple, good old fashioned shrimp salad. I love the combination of ingredients & recommend adjusting the amounts to your taste. We prefer less mayo and more egg so I made those adjustments. Love the crunch of the celery & carrots in this salad. I also used red onion for added color. Thanks for sharing this tasty recipe! :)

Carrot Cake III

Although it was difficult to refrain from making ingredient changes based on all the advice from previous reviews, I ultimately decided to stick to the original recipe. It is absolutely the most delicious, moist, flavorful, perfect carrot cake! Nothing needs to be added or taken away or substituted. Made this recipe as cupcakes for the Hubster's birthday since he requested carrot cake, and we absolutely loved them! The frosting is FABULOUS! I halved the recipe and it made 12 decadent cupcakes (baked at 350 for 20 minutes) with just the perfect amount of frosting. Thanks you so much, Tammy, for an awesome recipe! :)

Cape Breton Blueberry Grunt

This is the second time I've made this dessert and it turned out MUCH better, since I used only 1/2 cup of sugar to sprinkle over the blueberries. The first time I made this it was WAY too sweet. I also used 1/4 cup of applesauce instead of the egg and it worked great! We really like this odd-named dessert! The fresh blueberries are delicious when they aren't drowned in sugar, and I think fresh blueberries are a must. Thanks for the good start to a yummy dessert recipe! :)

Spiced Applesauce Bread

Definitely need to double the spices, but other than that, this bread is a keeper! Mine got a little dark around the corner edges as it needed to bake for another 10-15 minutes before it was done, but I can live with that. Very moist & flavorful! I didn't have pecans so I used almonds instead and it was pretty tasty, but I'll make sure I have pecans next time. They will definitely round this out nicely. Thanks for sharing this yummy recipe! :)

Best Whole Wheat Chocolate Chippers

These fabulous cookies came out just perfect! I love when I can use whole wheat in a dessert. :) Didn't change a thing and we love these big, soft, gooey, tasty treats! Beware, this recipe makes A LOT! I only made 1/4 of the recipe and got 2 dozen good-sized cookies. Thanks you so much for the recipe! :)
