We loved this recipe. Assembled it as instructed, then covered and refrigerated overnight for baking the next morning. Turned out EXCELLENT! Was a huge hit for breakfast on Christmas morning. Thank you for sharing this recipe!

Boilermaker Tailgate Chili

Reviewed: Sep. 12, 2014
Perfect chili! The pot was so full that I had to leave out 1 can of beans and 1 can of diced tomatoes, but it was still an awesome chili. All the flavors blend well and cooking time was spot on. Since we have a toddler, I reduced the spicy ingredients quite a bit and that was a good call. It still had a good spice to it in the end. This will be my go-to chili from now on! Thanks so much for sharing the recipe! :)

Corn Bread Loaf

Reviewed: Aug. 2, 2014
Perfect cornbread. Period! This recipe makes exactly 24 mini muffins which is perfect for our family with a 2 yr old. He loves these "baby cornbread muffins" that are crispy outside and moist inside. He'll put away 6 mini muffins at a time with his soup or chili. Then he and the hubs will fight over the last muffin.. That makes this recipe a 10 star recipe in my book! ;)

Belle's Hamburger Buns

Reviewed: Jul. 31, 2014
Great hamburger bun recipe! Simple, fast (as far as yeast dough is concerned that is), and delicious. I halved the recipe using a full envelope of yeast and and entire egg. It made 8 perfect buns for Slopy Joes II. I have no complaints here. Baked up beautifully as instructed. Will definitely use this bun recipe in the future. Thanks for a keeper! :)

Downeast Maine Pumpkin Bread

Reviewed: Mar. 27, 2014
My go-to pumpkin bread recipe for eating and for gifting! I use 2 cups white sugar and 1 cup brown sugar. I also am VERY generous when measuring the spices b/c we like it super flavorful. Make this bread. You won't be disappointed! :)

Turkey and Quinoa Meatloaf

Reviewed: Mar. 21, 2014
Used 2 eggs, substituted ketchup for the tomato paste, used 2 cloves garlic, reduced hot sauce to 1 tsp, added 1/2 a red bell pepper (chopped) to the onions. I was reluctant when I saw this recipe, but it came together just as instructed and the result was DELICIOUS! MY 2 yr old and my husband both INHALED this meatloaf and asked for seconds. That is a win-win, my friends. :)

Oatmeal Chip Cookies

Reviewed: Aug. 16, 2011
As written, this is a fairly decent cookie. I, however, wanted a more oatmeal-y cookie so I used 3c oats, used 1c chocolate chips, and replaced the other 1c with chopped pecans. For a hint more flavor, I added 1t cinnamon as well. We loved these cookies! The end result was the perfect oatmeal cookie with just the right amount of chocolate chips. Hubster ate 8 cookies right off the bat with a glass of milk. Ok, so did I! :) A half-batch made 36 perfect cookies for us, so the whole recipe would make a ton! Thanks so much for sharing the recipe!

Caramel Chocolate Corn

Reviewed: Aug. 14, 2011
Ok, so there is no reason that something this sinful should be this easy to throw together on a whim! We wanted a sweet treat instead of the plain old popcorn for a Saturday night movie and ran into this recipe. Followed everything exactly as written. In 20 minutes, we were shoving handfuls of this caramely, chocolatey, popcorn deliciousness into our mouths at record speed. LOVED IT! Had NO idea caramel popcorn is this easy to make. Will be doing this again and again!! Thank you so much for sharing the recipe! :)

Creamy Lettuce Salad

Reviewed: Jul. 25, 2011
I love almost any leafy salad with the addition of hard-cooked eggs, so this recipe was a winner for me. Homemade dressing is ALWAYS a plus and I really liked the flavor of this one! I added some cracked black pepper to the dressing for a little zip and I threw in some chopped cucumber & chopped red bell pepper to get more veggies into my lunch. :) The salad colors are fabulous and I recommend layering the ingredients as opposed to tossing them to keep it colorful and pretty. Thank you so much for a fabulous salad! Will be enjoying this one again and again. :)

Italian Sausage with Farfalle and Broccoli Rabe

Reviewed: Jul. 22, 2011
A really good, quick, pasta dish! We like these brothy sauces in pasta dishes as it is a nice change from tomato-based sauces. I think it's a little heavy on the butter, so will reduce or leave it out next time. No need to add the salt. The broth can probably be reduced to 2 cups. Used regular broccoli since I had it on hand and it worked out great! Be sure to cook your pasta to JUST al dente so that it can soak up all that rich sauce from the pan. Thanks for sharing the recipe!

Baked Oatmeal II

Reviewed: Jul. 20, 2011
Thought we'd try something different with our oatmeal and discovered this wonderful recipe. Halved the recipe (it's just the 2 of us) and baked in an 8x8 dish. I used 1/2 butter & 1/2 applesauce and it worked out just fine. Might use all applesauce next time to make it a little less fat. Loved the flavors, loved the texture, loved the quick prep, will be making this again. We both poured milk over the top and enjoyed this new breakfast treat. Thanks so much for the recipe!

Lemon Pie Bars

Reviewed: Jul. 20, 2011
Whether you like more filling or less crust, it doesn't change the fact that the combination of flavors of this lemon pie bar are fantastic and perfect. I love the simplicity, flavor, and texture of this shortbread crust and it holds up very well to the liquid. The lemon filling is FABULOUS! I made double the filling b/c my pregnant self has been on a lemon kick for months now and it really hit the spot. I do think that the written amount of crust to lemon filling would be just fine with us, too. Halved the recipe so I used a 9" deep dish pie plate and it worked out well, like a tart. Served beautifully with the dusting of powdered sugar. Hubster loved this dessert and we gobbled it up over several days (it is very good chilled!). Thanks for sharing the great recipe! :)

Pork and Veggie Saute

Reviewed: Jul. 19, 2011
We really liked the flavors of this dish. I doubled the veggies called for and added thinly sliced carrots & onions and it STILL could have used a lot more veggies. I also made 1.5 times the amount of sauce to make up for doubling the veggies. Next time, I'll at least triple the veggies (I think I'll use a whole 8oz of mushrooms). Hubster says adding some sliced water chestnuts will make this dish even better and I agree. There is plenty of sauce to do so, so add whatever veggies you like. I think those changes will make this a 5-star dish for us. Perfect to serve over a bed a jasmine rice. Thanks so much for the great start!

Shrimp Lemon Pepper Linguini

Reviewed: Jul. 14, 2011
One of our favorite pasta dishes! I've made this a couple times now and we absolutely love it. I always double the broth & wine but keep everything else as-is, then let it simmer down to the amount of sauce I want. If I don't have enough parsley, I use more basil & vice versa. Very easy recipe to play with. No complaints and no leftovers with this one! Thanks for a great recipe!

Apple Squares

Reviewed: Jul. 14, 2011
LOVED these!!! I did double the apples and reduced the sugar slightly, but I think that they would still be delicious as written. Modify sweetness and fruit content to your liking -- you can't go wrong. I love using fresh fruits in easy-to-prepare desserts, so this one is a keeper! Made these to send home with family who were visiting from out of town and the Hubster was so sad to see the apple squares go! So I'll have to make him another batch. Thanks so much for the great recipe!

Chicken Wild Rice Soup I

Reviewed: Jul. 12, 2011
I chose this recipe over another chicken & wild rice soup recipe because it used all "from scratch" ingredients & had more veggies. I prefer real wild rice to the boxed stuff any day! We enjoyed this soup with just a few changes: less butter (1/4c) with 2T olive oil, less flour (1/2c), more curry powder (2t), more wild rice (2.5c), add 1/4t thyme, & next time I will leave out the almonds. Overall, it turned out well and I will make it again. We really liked the curry flavor and the rich & creamy broth. A very beautiful soup when all is said and done. Thanks for sharing the recipe!

Lana's Sweet and Sour Meatballs

Reviewed: Jul. 7, 2011
LOVED this dish! My only gripe is the same as others: too little sauce for the amount of meatballs. I made 3/4 the amount of meatballs (had 1.5lbs of beef) and made 1 1/2 the amount of sauce. Even with that change, I still think it would have done with a tad bit more sauce for serving over rice. Other than that, the resulting flavor of the meatballs and sauce are wonderfully perfect! Love the pineapple and bell peppers combo. I used both red & green bell peppers for more color and will do that again. I also baked the meatballs on parchment paper on a baking sheet for easy cleanup! This is a keeper! Thanks for the great recipe!

Inside Out Ravioli I

Reviewed: Jun. 28, 2011
Other reviewers were right. This pasta dish would have been WAY too dry had I not used a 26oz jar of spaghetti sauce instead of the 16oz. Even with that change, it still could have used a little more sauce to get some moisture down into the pasta layer. Or maybe it needs to be 4 alternate layers to distribute a little more evenly. I used a combination of mozzarella & cheddar, but otherwise stuck to the recipe. Definite changes next time to get a better dish. It has potential! Thanks for the decent start. Will give it another try.
