Red Skinned Potato Salad
I don't like potato salad and my son doesn't even like potatoes so I just whipped up a batch for my husband... DELICIOUS! Even DS loved it. DH went to work and boasted about it and commited me to making three more batches for his parents and some clients. I had to make another batch as soon as the first one was gone, which was no time at all. Both times I made this, I used less mayo and the second time around, I added small cubes of cheddar cheese which I think did actually make it a little better. So good! Will never, ever need another potato salad recipe.

Quinoa and Black Beans
I'm pregnant and working and I've been looking for something nutritious that I can make on the weekend and take throughout the week for my lunches. This recipe was exactly what I was looking for. This is delicious and I love how healthy it is. I recommend only using one can of beans. After making it originally, I added an additional cup of quinoa cooked in just water because the beans were too overpowering. Also, I didn't have the spices listed so I've been adding sriracha to taste. For anyone interested in tampering a bit and trying something new, I highly recommend adding avocado, salsa, and some pepper jack cheese and using it as a dip for chips. Amazing!

Mom's Sushi Rice
Sushi is my absolute favorite thing in the world! Before, I only was able to enjoy it on special occasions, but with this recipe, now I make it every Saturday. I was amazed at how good this tasted, by itself or in a sushi roll. Delicious. I add toasted sesame seeds and have never used kelp and it's perfect. My sushi fanatic friends loved it as well and were really surprised at how well it turned out. I use imitation crab, nori, cucumber, sriracha sauce, and avocado to make the PERFECT sushi the serve it with soy sauce and wasabi. So good!
