Peach Muffins
I read the other reviews and modified this as follows for a wonderful, moist muffin (18): used 1/3 whole wheat flour (3/4 C + 2T = 1 C white--though an entire cup would not have hurt the results), 1/2 T cinn., 1/2 tsp corriander, 1/2 tsp salt, 1/2 C oil, >1/2 C pureed peaches + 1/2 tsp orange extract, 1 C Splenda, 1/2 C Spenda brown sugar, 3 C peaches, and 3/4 C walnuts. Cooking time was about 22 minutes. Yum!

Slow Cooker Vegetable Chili
This was good, however, you don't taste any of the vegetables--just the chili flavor. Therefore, I nix the idea! I like the flavor of vegetables in my veg dishes.

Basil, Roasted Peppers and Monterey Jack Cornbread
I used 2 pkgs of Jiffy Mix (for a double recipe), thus omitting the sugar and baking powder (which are already in Jiffy) as well as the cornmeal. I doubled the recipe but left out 2 eggs (because I was short)--but they were not needed. It was truly wonderful, though almost souffle-like. I won the "side dish" award at our BBQ ribs cookoff--10 bucks, ya'll! A definite crowd pleaser and very unusual. P.S. No need to serve it with butter--it's rich enough.
