Best Chocolate Frosting

The best chocolate frosting recipe I've found thus far! I did as others suggested and alternated the milk with the confectioner's sugar. It was incredible on the black forest cake I made!

I made this recipe without any changes and it was absolutely phenomenal! Very moist and delicious! This is definitely one of the cakes I'll be making for my wedding!

Perfect St. Patrick's Day Cake

I'm not a fan of chocolate cake or Guinness, but you mix the two and it's fantastic! The beer cuts the bitterness of the chocolate and mellows it. The frosting wasn't really my cup of tea. I think I'm going to modify a chocolate frosting for the next time I make this. Overall though, this recipe is definitely going to be my "go to" for chocolate cake.

Quinoa Broccoli Casserole

Excellent recipe and super versatile! I accidentally pimped it out a bit by throwing in some pre-cooked vegetarian chxn (I swear, I thought I saw chicken in the recipe the first read-through... I'm used to getting carnivorous recipes and vegetarianizing them) and substituted alfredo sauce and chopped up mushrooms in place of the cream of mushroom soup (I realized too late that my parents didn't have any on hand). Anyhow, it's delicious, super easy, and difficult to screw up!

Portobello Mushroom Burger With Bruschetta Topping

This recipe was awesome! My parents and boyfriend all loved it. Just note that this recipe makes waaaaay more filling than for just 2 mushroom caps (I doubled the recipe as I was making four portobellas and I ended up having a ridiculous amount of bruschetta leftover).

Chef John's Stuffed Peppers

I made this for my parents tonight as a "thank you" for letting us stay with them until our new apartment is repaired. Since I'm a vegetarian, I substituted the beef broth with vegetable broth, beef with Quorn Grounds, and the Italian sausage with Lightlife Italian Sausage. I didn't change anything else and it turned out absolutely fantastic! My dad was apprehensive at first, but after trying it exclaimed, "My god! This is actually REALLY good! Wow! I really like this! I was skeptical, but wow. I am in shock. This is good!" This recipe is DEFINITELY a keeper!

Vegetarian Meatloaf with Vegetables

I've never been a meatloaf fan, but it's my boyfriend's favorite. Since he's only a vegetarian because we live together, I do my best to make vegetarian meals reminiscent of what he's been accustomed to eating. This meatloaf was a hit! I thought since we'd have leftovers we could eat it for dinner the following night. When I arrived home he asked, "So what's for dinner tonight?" I said, "Oh, I thought the leftover meatloaf." He said, "Yeah... About that... I ate the other half of the pan today for lunch."

The Best Vegetarian Chili in the World

I recently moved back in with my parents and wanted to show my appreciation by making them dinners on the days I have off of work. They're die-hard meat eaters and I'm a vegetarian so I try really hard to find recipes that won't violate my ethics or their taste buds. This one was an absolute hit! The only modifications I made were adding a package of angel hair pasta like my Grandma Ruth used to do with her famous chili (cook separate and combine just before serving) and used fresh green chiles instead of canned. Thank you soooo much for this recipe!!!

Pumpkin Soup

This recipe is awesome if you enjoy creamy potato soup but would like to switch it up a bit. The pumpkin taste is only slightly noticeable. If by any chance you're apprehensive about trying this recipe because you worry you'll feel like you're eating a pumpkin pie or heck, a watered down jack-o-lantern for that matter, you've got nothing to worry about (I myself can't stand pumpkin pie, but I love this stuff!). My fiance and I both agreed this recipe is awesome, but might be even better if there were cubes of potatoes added in at the start of the 2nd simmer to give this a bit more substance and something to bite into. If you don't have plans on using the other 1/2 of your pumpkin or the other 1/2 of the pint of whipping cream, it'd be in your best interest to double this recipe to save more money and possibly have left-overs for later if your family doesn't eat the whole pot in one sitting. I only made a single batch because the recipe writer claimed this made 9 servings (HA! The max for a single batch is 4 servings in my opinion). In addition to using vegetable broth in place of the chicken broth and totally eliminating the salt, I also used a potato masher rather than pureeing the soup in a blender. This gave the soup a little bit of texture and meant fewer dishes for me to clean later. ;)

Easy Vegetarian Red Beans Lasagna

This is the best lasagna I've ever had! I doubled the recipe and added an extra can of beans (at the recommendation of other reviewers). Next time I'll mash a can of the beans and layer the cheese in with the beans and lasagna noodles so the top isn't the only part with the cheesy goodness. I also want to find a good alternative for the gruyere cheese so I can afford to make this more than once a year (it's $20/lbs here! Oy!).
