I'm not sure how this bread turned out for those people who didn't use a bread machine - I for one don't have one. The first time I made this bread I followed the recipe quantities exactly but found that I needed a lot more water than 1 1/4 cups. I used the recommended amount of yeast. Aside from hand kneading the dough, I followed the directions but the dough ended up very dense - like a bagel. The second time around, I put in 4 tsp yeast and the dough rose a lot more, but flattened out on itself upon doing so (perhaps it was too moist?). I just made this bread for the third time - and this time, perfection! I used a loaf pan which helped a lot. 4tsps yeast, 2 tsp salt (1 tsp just isn't enough for my taste), 2 tbsp oil (I like the dough better this way) and 3 cups of flour with the recommended 1 1/4 cups water. Best bread I've made yet!
