Mushroom Chicken Parmesan

I don;t usually make recipes unless they have at least a 4.5 star rating, but I made an exception on this one. Wrong. It was bland, boring, and had zero presentation quality. It might be okay with a whole lot of modifications, but as written it falls flat on all counts. The only reason for the two stars instead of one is that the chicken was moist and tender (although flavor-less) from the dredging in butter. If considering this one, move on -- there are too many other wonderful recipes out there to waste your time.

Country Fried Steak and Milk Gravy

This recipe knocks it out of the ball park. My husband bows at my feet whenever I make it (so yep, I make it a lot!!). Seriously, I use this as my "go to" recipe for venison cube steaks (which is about the only way I'll eat venison). Husband always takes leftovers into the office to make his male co-workers envious, and they, too, bow at my feet ;) Coming from an ex-Texas girl who knows her chicken-fried steaks, this recipe is perfect as written!!

Tomato Curry Chicken

Very good basic recipe to try to get my husband to enjoy curry as much as I do. I would call this "training wheels" curry. Also, I thought the beer lent an unnecessary flavor layer -- and don't get me wrong, I LOVE beer -- I just don't believe it suits curry all that well (let's stick with Irish stews for that :) Suggest chicken stock instead. Probably will not make again since it was just "too basic," but do appreciate it's value as a first pass for hubs!

Baked Pork Chops I

Stunningly perfect exactly as written. If you're one of those that feel you have to "mess" with a recipe (like so many do for whatever weird self-serving reason they do) you're wasting your time on this one. It's perfect.

This was super easy and mighty tasty. The only thing I will do differently next time is NOT use the Lipton onion soup mix that others recommended (instead of the canned) and follow the recipe EXACTLY. Not sure where the taste buds are of the instant soup fans or why I deviated when I had the canned variety in the pantry, but do yourself a favor and follow this AS WRITTEN for an "out of the park" easy meal.

Thai Beef Salad

Excellent just as written. Absolutely no need for any alterations. The only down side? I can no longer ask my husband to take me out to our favorite Thai restaurant for this dish when I can make it at home -- and make it better! Oh the perils of finding good recipes :)

Marinated Baked Pork Chops

So-so marinade. Definitely cheaper than anything store bought or from a bottle, but not any more spectacular than that either. I grilled the chops and can only imagine this recipe being successful when the chops are grilled. I imagine baking them would leave them with an unappealing visual presentation color-wise. Grill marks are always good!

Rosemary Ranch Chicken Kabobs

Excellent. I'll definitely put this into my summer "go to" rotation. Made exactly as written, and it was absolutely perfect. The sauce is to die for when the extra is heated up and drizzled over the kabobs before serving. This recipe is company-worthy, classy yet casual in its presentation, and most important of all -- super tasty!! Thanks so much for sharing.

Pollo Mediterranean

I was REALLY looking forward to tasting this dish since I adored the ingredients list, but after preparing it as written it fell a little short -- even after taking some of the "most poplular reviews" comments in mind and adding capers and increasing the olives (which helped a little); but it still was not as stellar as some reviewers would have you believe. Although hubs said he enjoyed it, we both agreed it was NOT company worthy as some have written.

Scallop-Topped Portabello Mushrooms

Oh my goodness. Pure bliss. Without a doubt the best recipe I have made from this site. It's simple, it's five-star restaurant quality, and it's definitely company-worthy. I call that a home run! I used leftover scallops from a dinner out the night before (talk about cost-effective), and the ONLY change I made to the recipe was to quarter the scallops for presentation and I served over linguine that I tossed with about 1/4 cup freshly grated Parmesan (to add weight to the pasta). Other than that, no alterations necessary, and well worth the trip to the Asian market to find my new best friend -- Japanese mayonnaise!

Ginger Glazed Mahi Mahi

Incredibly delicious. Took the comments from one of the "most popular" reviews and added lime juice and a little hot pepper sauce to the marinade since we like things citrusy and hot. Then I had hubs cook it on the grill and use some excess marinade while grilling. The honey helped give it just a hint of crispiness. Served over a bed of mixed lettuces and spinach sprinkled with sliced almonds for a super healthy yet delicious and tasty summer dinner. Absolute perfection I tell you!

Absolute perfection. I used blackberries instead of mandarin oranges since I felt it lended to better visual presentation, but other than that I didn't change a thing. My husband fell in love with me all over again after he tasted this! Perfection, I tell you; pure perfection!!!

Crispy Oven-Roasted Rosemary Chicken with Sausage and Potatoes

Absolutely awesome. Deserving of company in its presentation and flavor. As another has written, prepare everything in advance for a clean kitchen when company arrives, and then just pop into the oven and enjoy a glass of wine (and as one reviewer wrote: enjoy a glass while cooking -- this is a fun dish to prepare if you love to cook). I added onion and carrot as per other reviews and I tossed rosemary into every browning process (yep, I'm a rosemary freak). No need to add ANY additonal olive oil beyond the first -- everything browns in succession from the remaining wonderfully blended flavors. If I found a restaurant that served this, I would be there every week -- it's that good!! And in my modest opinion, there is absolutely no substitute for fresh rosemary. Bliss I tell you, pure bliss.

Fiery Fish Tacos with Crunchy Corn Salsa

Used grilled tuna instead of tilapia and added about 1T Cholula to the sour cream for a more gourmet appearance and taste (yes, we like things h-o-t)!! Also added drained black beans to the corn/onion/pepper/cilantro mixture and used more lime juice than called for (all this should be done "to taste" anyway). I almost filled up on sampling the wonderful corn concoction (which is very similar to a corn salad I already make) before the fish was finished on the grill! Yummy. As a whole, this is an excellent recipe -- pretty and tasty enough for company-- and I will definitely add it to my summer grilling rotation.

Nothing earth shattering about the end result. I'd hoped for a lot more based on reviews, but this one was nothing special. Will not make again or use any form of this base to modify. There are a ton of better recipes out there.

Allana's Excellent Potato Soup

Sorry, but I can only give this three stars since A LOT of modifications were necessary to turn it into what was ultimately a FIVE start soup. Prepared as written, it is only threee stars. To amp it up in star quality, the potatoes needed to be pureed (as others recommended)to thicken the soup before it could considered anything but a "broth." I had to use more onion (1/2 C), much more ham (1 C), I added diced celery (1/2 C), and more seasonings (1 t pepper and 1 T Adobo)to help the recipe find its pulse. And since it was still significantly UNDERwhelming, I had to reach for a "hail Mary" in my pantry and refrigerator and decided on a tablespoon of pimento and about a tablespoon of the juice from the jar. Suddenly, and almost miraculously, the soup turned into FIVE star flavor and appearance. I would definitely serve the recipe (as modified) to guests.

Cranberry Orange Cookies

Absolutely incredible. The only change I made was to create a thicker icing (so they iced with a knife rather than drizzle); and according to all five who were served, this is "one incredible cookie." As an added touch, I placed three or four dried cranberries in the center of the iced cookie, and they looked stunningly beautiful.
