Chicken or Turkey Tetrazzini Deluxe

I thought this was a wonderful way to use our leftover turkey dark meat (no one in my family likes it.) I had read the other reviews and so I (of course) made a couple of adjustments. First, I left out the bell peppers. I added the sherry immediately after sauteeing the mushrooms and onions together. I used a really nice dry Amontillado and adding it to the hot pan cooked out all the alcohol, leaving only the flavor. I thought the sherry complimented the Parmesan cheese PERFECTLY. I also only used one can of cream-of-mushroom soup and a whole can of chicken broth-cutting out the rest of the liquid. I added a large, drained jar of diced pimentos when I added the peas to the sauce and topped off the casserole with crushed herb crackers and Parmesan cheese. AWESOME!

Chili Beef Casserole

This didn't do it for us. I used an extremely high-quality chili powder and followed the instructions exactly,but this was a pretty "blah" dish. It was so flavorless that we had to sprinkle taco seasoning on it at the table to make it taste like anything. I took the leftovers to work the next day, but I couldn't bring myself to eat them.

Maple Walnut Scones

Amazing recipe! I used two tablespoons of maple syrup in the scone recipe, and they turned out wonderful. I think next time, I'll just mix the powdered sugar and some maple syrup together for the icing. As it is, it was nothing special.

Tres Leches (Milk Cake)

WHAT an AMAZING recipe! This cake was gone in no time and all of the guests RAVED about it. A Mexican friend suggested poking the cake with bamboo skewers before pouring the milks over, and the cake soaked everything up perfectly.

Tiramisu Cheesecake

Quick, easy, wonderful! I did like everyone else and doubled the amount of Kahlua, and since I couldn't find any ladyfingers in Houston, I used 'Nilla wafers...I have NOT stopped getting compliments. Don't worry about serving this to kids...all the alcohol bakes out of the cake, if they'll eat it, let 'em!
