Sweet and Oh So Spicy Kielbasa

Took it to work & very few liked or even tried it. My guess was the texture & knowing the odd combo of ingredients. If the cherries & pineapple had been chopped fine, I think it would've been better accepted as the flavor was ok. Those of us that did try it liked the meat but thought the whole cherries were strange. I'm still eating the leftovers two days later and next time I will go back to my old hot weenie recipie that they all love.

Quick Sherry Chicken

Good flavor, very simple but not enough sauce for serving with pasta. We used boneless chicken breast cut in smaller portions, added fresh mushrooms , salt, pepper and left out the onions then simmered about 20-25 minutes until chicken was done and & sauce was thickening up. We would do this again and double the sauce and perhaps toss in some asparagus.

Best Ever Banana Bread

Very good recipe. Per other readers suggestions, I added the nut topping instead of nuts in the batter and an extra banana making it very moist. I used part brown/part white sugar. Not sure I'd do that again as it made the bread a darker brown and I had to explain to the kids that it's just darker in color and no it wasn't burnt. Kids!!

Chicken Wild Rice Soup

Restaurant quality! I made a lower sodium version and it turned out great. Sauteed veggies in no salt butter before adding to low sodium broth. I cooked the chicken breast and wild rice (separately of course) in the low sodium broth as well and eliminated the boulion. The mushroom soup was also low-fat-low sodium. We did not miss the salt at all in this soup!

Curried Coconut Chicken

I followed the recipe but wish I would have added a tad more curry. Like others, I could smell curry (though not unplesant) in my kitchen for 2-3 days afterward. The sauce was a little thin but it worked out well on the rice so no complaints on that. Thanks for the recipe, it's a keeper!

Fresh Asparagus Risotto

Portuguese Chicken I

This ones a keeper. I used boneless thighs cut into bite size pieces so it cooked a little quicker and added fresh sliced portabella muchrooms and light cream. Served over basmati rice. Super delicious.

Roasted Brussels Sprouts

This was okay but I didn't get the WOW factor others seemed to. Next time I would use a variety of veggies and definitly cut the sprouts in half so they get tender.

Laura's Quick Slow Cooker Turkey Chili

This has been one of my faves since I found it about 2 yrs ago. It does not have to be done in a crockpot, just simmer on the stove or refrigerate overnight to get the flavors blended well. I sometimes use 2 cans of any combo of black, kidney,garbonzo beans,whatever I have on hand, 1 can soup and 1 can diced fire roasted tomatoes to mix it up or sometimes add corn. As for heat, I add extra hot sauce or sliced jalapenos. Great toppings are cheese, diced onion, sour cream, salsa, avocado bits, cilantro...be creative.
