Persimmon Bread II

Making the recipe as-is produce a very sweet, tasty, and mild bread. It wasn't as spicy as I'd like, but my friends enjoyed it. Next time I make this, I'll add more persimmon (as others have suggested), reduce the amount of sugar to 1.5 cups, add 1 cup brown sugar, leave out the water and add more spices (1/2 tsp. each of cloves, allspice, ginger). I also might just mix the persimmon straight into the batter, rather than mix it with baking soda separately. It solidified quickly and I'm not sure how well it mixed in...

Mango Corn Salsa

I made a couple of variations based on what I had on hand and it still turned out tasty: one habañero (deseeded), two jalapeños (deseeded), 1/4 large red bell pepper. I think next time I may try lime juice instead of the vinegar, skip the sugar (my mango and corn were both really sweet) and add an extra roma tomato.

Delicious Ham and Potato Soup

Great soup. I added diced carrots and used Spam, which worked pretty well too. Substituted milk with soy milk, and used whole wheat flour. Topped it with cheddar, and it was delicious. Great after a long, cold, stressful day.

Slow Cooker Chicken Marrakesh

Made this recipe as written, but also threw in some cilantro, since that appears in a lot of Moroccan dishes, and it was delicious. Be careful when serving though, because the sweet potatoes get crumbly and mushy. Served it with couscous, and they went well together. Even my boyfriend who doesn't generally like sweet potatoes enjoyed it!

Green Bean and Mushroom Medley

I pretty much followed the recipe (didn't measure the veggies really), and decreased the amount of butter a little bit. Turned our delicious and was the perfect accompaniment for a dinner party. Looked lovely!

Healing Cabbage Soup

I love this soup. It's easy to make and comforting on a cold day. It's also super easy to modify. I always throw in celery, carrots, potatoes, and whatever I have lying around to make it heartier.
