Grandma's Lemon Meringue Pie

This pie was so amazing. :) I used a little more than 1/4 cup of lemon juice and the zest of one lemon to flavor the filling - as for the cooking, I stirred that pot until my hands were turning pink from the heat! ;D The filling was superb, tart and sweet (not boring or mellow in the least!), and I was so relieved by the simplicity of the recipe! ;D Definitely beyond my expectations! Note: I was anticipating a very intimidating, impossible project (eggs scare me in recipes - what happens if the yolks scramble? What if the whites don't fluff up?), but it turned out to be oh-so-simple! :) For beginners like me (or, I was until I baked this pie ;D), don't be afraid! Just follow the instructions and everything will turn out A-OK! I will definitely make this again - my family raves about it all the time now.

Apple Bundt Cake

A wonderful recipe that's worth every minute you spend making it! I added an extra cup of apples to the recipe and replaced the oil with no-sugar-added applesauce and greased/floured my pan with the powdered sugar for a crispy crust. I also stirred the apples in with the batter as opposed to layering them. With these changes, this cake, sliced into 36 slices (for breakfast accompaniments/minor dessert), this cake is only 105 calories per slice! Yum!

Baked Oatmeal Squares

Exceptionally delicious! I just ate this for breakfast with a few changes - I omitted the nuts and raisins and replaced the oil with applesauce for a healthier alternative. I also nearly halved the sugar and replaced it with brown sugar, instead. Before baking, I sprinkled half of the bar with chocolate chips and in the other half, I pressed walnuts into the bar and layered banana slices over the top. Five minutes before baking time was up, I removed the pan and spread the chocolate, sprinkling marshmallows on top for a s'mores effect. Scrumptious warm with a smooth, thick oatmealy flavor, and the bananas paired beautifully together with the bar in texture! SO simple - a definite keeper!
