Blackened Tuna Steaks with Mango Salsa

I made this last night for my boyfriend and I's anniversary dinner and we both loved it. Here are a few adjustments that I did: 1. I used both a tuna steak and a tuna medallion. They were both probably about an inch thick so they had to cook much longer than the suggested time in the recipe. 2. I used more lime juice and less garlic and olive oil in the marinade. 3. Spices are expensive and you often only use them once or twice so instead of going out and buying the ones I didn't have I just made due with what was in my cabinent (I only used salt, pepper, paprika, garlic powder, and thyme)...the rub was still AMAZING. 4. Also, to make the mango salsa requires pricey produce and believe it or not, most grocery stores will carry pre-made mango salsa so I bought that instead! 5. I recommend rice as a side dish. It goes really well the grill taste of the tuna as well as the sweetness of the salsa. Thank you so much for this recipe!!

Cinnamon Sugar Butter Cookies II

Delicious! I followed the recipe exactly for the first batch and my only complaint was that they were a little crisp around the edges, so the next batch I only cooked for 16 minutes and they were perfect. I was also a little reserved at rolling the cookie around in the sugary mixture, but it all sinks in while the cookies bake so there isn't really any sugar on the surface. Thanks for the great recipe!

Baked Potato Soup V

Although simple and quick, this soup is too thick and bland. I have another recipe that I swear by, but it uses a lot of ingredients and takes a while to cook so I decided to try this alternative. I did not use the bacon and I adjusted the recipe to yield just 1 quart. To me, it tasted like plain mashed potatoes (it had the consistency of it too!)

Double Layer Pumpkin Cheesecake

Key Lime Cheesecake I

This is the best dessert. Ever. I made this for a family dinner and it was gone almost instantly. It was also the first cheesecake I have ever made and I was surprised at how well it turned out! Months later everyone is raving about it. This is a must try!!!

Burgundy Lamb Shanks

My only complaint is that next time I will be using a different part of the lamb. I have never had lamb shanks so I didn't realize that they were mostly greasy, dark meat. Other than that, the seasoning and sauce was just divine!

Soft Oatmeal Cookies

As far as the taste goes, you can't go wrong. They are wonderful! However, my cookies were not soft. Even if they looked soft and puffed up when I took them out of the oven, they immediately fell into flat, crunchy cookies. I didn't flatten them pre-oven as some have suggested. Someone advised me to use half softened butter, half butter flavored Crisco to give the cookies a softer, fluffier look.

Country Pumpkin Muffins

As many other reviewers have stated, you have to be very careful with how much oil and butter you use. It smells fantastic while it's cooking and taste wise, it's pretty good.

Teriyaki Salmon

The only reason that I didn't give it 5 stars is because it was a little too greasy for my liking. I baked my salmon steaks in tin foil at 375 for 20 or so minutes in order to let them marinate longer so that could have been the reason they turned out so greasy. However, I will definitely be using this recipe again....minus the vegetable oil!

Original Nestle® Toll House® Chocolate Chip Pan Cookie

For some reason, all of my chocolate chips sank to the bottom of the bars. Also, I was anticipating a much more gooey cookies, but that was not the case. I have read other recipes similar to this where the recommend splitting the recipe up into 2 small pans so maybe I will try that again. Regardless, you can't go wrong with this recipe. It's cookie and chocolate in bar form...I guarantee you will eat it all up!

Baked Pork Chops I

My pork chops were just a little too greasy for my liking...but maybe that's what makes this recipe appealing for other cooks? Regardless, it's a simple recipe and I would recommend trying it at least once!

Juicy Pork Chops

Delicious! As the previous reviewer stated, there is a lot of soy sauce in this recipe as well as garlic. I cut WAY back on the garlic and when I make this recipe again I will cut WAY back on the soy sauce. I added a half of cup of beer to the dish for moisture since my pork chops were very thick. I made them for my birthday dinner and my boyfriend enjoyed them soooo much! They are great with collard greens (or any other type of green veggie) and mashed potatoes!
