No Bake Cookies III

The proportions are perfect in this recipe, it's the TIMING that is wrong. The sugar mixture needs to be boiled to nearly soft-ball stage or the cookies won't set.

Stuffed and Wrapped Chicken Breast

We were looking to be less formal, so chopped the bacon & chicken in with the rest of the filling ingredients & served with the whole wheat biscuits from this site -- excellent, kids loved it!

Fluffy Whole Wheat Biscuits

Fluffy and wonderful. Made no changes at all to ingredients, kneaded in-bowl to save myself a mess, and patted lightly into 2" flattened balls instead of rolling out (again to save a mess) - worked GREAT!

Cinnamon Cream Syrup

Wanted to make a different apple syrup recipe but didn't have some of the ingredients, so made this & substituted apple juice for the water and left out the milk -- excellent syrup! For a later batch, we also threw in a handful of drief fruit bits.

Laura's Unbelievable Chicken and Pasta

Four stars only because we needed to tweak it to taste. We used fresh chopped spinach (don't keep frozen on hand), added a little red pepper & garlic & onion to the chicken, and used cream of mushroom soup as well as a few shakes of Italian seasoning. Worked well - the kids (ages 3&5) absolutely raved.

Spinach Rice

We picked this for dinner tonight only because we were missing one ingredient for the recipe we'd originally planned (found the 2yr old dumping an entire container of parmesan onto the kitchen floor this morning!). Pleasant surprise - it was great! We omitted the jalepenos but used about 1 Tbsp of diced green chilis as our family doesn't like much spice. Used sour cream instead of milk, and topped the baking dish with crushed Ritz crackers & a sprinkling of poppy seeds instead of butter. Served with broiled chicken and it was GREAT, even the 2yr old ate well.

Starkey's Mashed Potato Pizza

I expected to love this, but really didn't. I expected to need a bit more seasoning than I would usually put in mashed potatoes, and added it. But the taste was still somehow way too bland for us. I tried adding some corn & spinach to the second batch (like I said, we had expected to love it), but it didn't help either. I think I would have to put on some type of savory white sauce under the potato layer, or pour something over the top to give it some kind of spark.

Caramel Popcorn

Edited to add: You CAN make this recipe for people watching their sugars. I did a batch today with half brown sugar & half Splenda, and it came out very well -- but it hardens in less than HALF the time of sugar - so I burned the first pan. About 20 minutes would have been right, with at least one stir. I was very worried about putting baking soda in, and when it started to foam up over the side of the little saucepan it freaked me out. But this was EXCELLENT. The coating didn't soak into the popcorn the way that others have, and it baked up perfectly crispy. I should have baked it a little less, as some of it got a 'burnt sugar' flavor beyond what I like. But the remainder was absolutely perfect. Next time, I'll try cutting the butter a bit as others suggested, and will limit my bake time to 45 min or so. We did pan-popped popcorn, and popped just before boiling the coating, so the popcorn was all still warm when we poured the coating on -- poured it directly on in the pans and stirred with a silicone spatula, stirred while baking the same way, and didn't need to break it up much at all.
