Spicy African Yam Soup

This was absolutely delicious! I did increase to 4T of peanut butter to add some extra protein and creaminess, but that's the only change I made. My husband is not a fan of yams/sweet potatoes, however he gobbled this up, as did our 2.5 year old. I did not find it spicy at all, but we are used to pretty spicy foods so I suppose it's all relative. Thanks for sharing, I will definitely make this again!

Spinach and Black Bean Pasta

I really wanted to like this--it's simple, easy and vegetarian, but unfortunately it came out watery and bland. It's a good thing I was tasting as I was cooking, because had I put this out as written, I think it would have barely been touched. I kept adding things--chili powder, paprika, oregano, cream cheese, and eventually a splash of red wine vinegar but it took a LOT of extra work to make this one edible. Our family is very into savory foods, but this just didn't do it for us. Sorry!

Vegetarian Stuffing

I had a bunch of stale ciabatta bread rolls left over, so I made this as one of my Thanksgiving dishes and it went like crazy! I was not expecting it, as I come from a family of serious carnivores/veggie haters. I used the cranberries and wild rice additions only, however I also added sauteed celery, onion, and carrot (cooked til tender in evoo and seasoned with the poultry seasoning), and I also used vegetable stock instead of broth which I think punched the flavor up a bit. Cooked it a day ahead, and definitely agree that it was better the second day. Thanks for a fantastic recipe! I will definitely make this one again.

Zucchini Cheese Garlic Appetizer

This went over really well as an appetizer at my son's 2nd birthday party. As suggested by several other reviewers, I used a bit less garlic than the original recipe calls for (3 cloves instead of 4), and I used 2 full cups of Bisquik as opposed to 1 3/4. I might even used 2 1/2 next time, as it was definitely still more quiche-y than biscuit-y, as others have mentioned. Other slight variations I made were: I cooked at 425 for about 40 minutes, adding some sprinkled cheese to the top for the last 5 minutes of cooking, used dried chives in place of the parsley (I didn't have any on hand and thought the chives would spice it up a bit), used 3 eggs instead of 4, and I also added 2 tsps of paprika. It browned up spectacularly, smelled amazing, and disappeared completely once it was cut. I used my food processor to chop all the onion and zucchini which made this dish even easier to prep. :) Thanks, I'll definitely make this one again.

Marinated Grilled Shrimp

AMAZING. Hands down the best marinated shrimp I've had. I am a huge garlic fan, so I doubled the amount, and I also added almost double the cayenne since we like things spicy. I used dried basil since we didn't have fresh. These were beyond my expectations. We grilled all types of things tonight, but this was the favorite. I will definitely make this again.

Mediterranean Lentil Salad

Fantastic! I made this for dinner tonight and served it with toasted pita bread, olives and feta and a creamy cucumber salad and it was delicious. I stuck with 1 cup of lentils, though I used green since that's what I had on hand. I also added 3 tsp of cumin and about 2 heaping tsp of curry to the lentils and veggies as they cooked, and I loved the flavor. Didn't have any celery, so I skipped it. Between honey and me we almost finished all 8 servings! I will definitely make this again, only next time I'll probs double it so we'll have some leftovers!

Winter Fruit Salad with Lemon Poppyseed Dressing

Amazing! I left the skins on the apples and pears to add to the festivity (I made this for a big family Christmas dinner potluck, so the red and green skins looked perfect!), and I also used an Italian lettuce blend instead of romaine, which I think added a little extra punch. The ladies in the family LOVED this one; it got many compliments. No leftovers, and we've been using the extra dressing to throw together delicious and quick salads all week. The dressing alone should get at least 6 stars... great find. Thank you!

Homemade Black Bean Veggie Burgers

Ok, let me preface by saying that I doubled the recipe and then also used twice as many eggs and about twice as much breadcrumbs as well and this recipe made 8 GIGANTIC burgers. They were too big for the buns! I also used poblano peppers instead of green for a little extra kick. I'm giving these 3 stars because they were just "eh" to me. I feel like they definitely needed more spices, though I'm not exactly sure what. I also made them for the purpose of grilling on our Weber, but they were waaaaay too soft to flip without ruining, so we ended up doing them in a pan on the stove. I suppose if you wanted to you could always start them there and then transfer them once the egg firmed them up a bit. They smelled delicious while mixing them, so I was sure they were going to blow everyone away (and the ratings led me to believe this as well), but honestly they fell a bit short of my expectations. They were also time consuming because I made my black beans from scratch, but I don't know that the payoff was worth it. I think next time I'll used canned beans and try using more veggies and twice the spices in the mix... UPDATE: I had these again for dinner, and for some reason they were much tastier than I remembered this time. ??? I had frozen them and just did them in a skillet--didn't add anything--but I had to edit and give these another star. :) Still think they need to be spicier, but I whipped up some chipotle mayo which was fab with them.
