Strawberry Pretzel Salad

I love pretzel jello. This was something my mom made every holiday and has lots of fond memories attached to it. With this particular recipe there are just a couple problems. First there isn't enough pretzel crust. You need 3 cups of pretzels so that the crust isn't too thin and hits all the spots. When you add the extra cup of pretzels don't increase the butter. There was too much. And as for the delicious white, middle layer. Yummy! But there is far too much! If I had put it all in the pan there would have been no room to pour the jello on top. So cut the recipe for the white stuff in half. The awesome thing about this recipe is you can do it up anyway you like. Try lemon jello and raspberries. Super pretty!

Good. I had some trouble reducing the vinegar, it turned hard fast. But the flavors came together well in the end.

Cindy's Jambalaya

This is a really great base! I didn't have shrimp so I substituted some langostino lobster that I had leftover. At the end I added cayenne, salt and more cajun seasoning. Very good.

Bessy's Zesty Grilled Garlic-Herb Chicken

Very Good! I substituted splenda for the sugar and I cut the oil in half and that was still too much oil. It just created flare ups on the grill. Next time I'll use 2 tbsps of oil and add some chicken stock to marinate next time.

Gourmet Mushroom Risotto

This was amazing. I followed the recipe exactly except I only used 1 lb total of mushrooms and I added extra parm. This was amazing...IDK what else to say lol. My first time making risotto and I'm not scared of it anymore!

Strong! Beware all the alcohol won't soak in because there is just too much. Delicious cake but cut back on the liquor in the glaze.

Tina's Healthy Boilermaker Tailgate Chili

I've made this a dozen times now and its fantastic. Here are my changes to make it healthier without sacrificing taste - instead of ground beef use ground turkey, replace the bulk italian sausage with a package of hot italian turkey sausages. Don't add the bacon bits they add no flavor just fat. Eliminate the green chilies and used the diced tomatoes with jalapenos. Amazing.

Spinach Quiche

Great quiche! Only one suggestion - bake the pie crust for 7 minutes or so before you fill it so that the bottom doesn't come out soggy. Other than that it was excellent.

Chicken Marsala

Very tasty. I cut the recipe down to a serving for one with the exception that I used 1 1/2 cups of mushrooms, 1/4 cup marsala wine, and a splash of sherry, because I wanted lots of sauce and mushrooms. It was very good. I did saute a small about of onion & 2 cloves of garlic in the butter/oil mix before adding the chicken. I would make this again.

Gramma's Apple Bread Pudding

Delicious and great consistency. As I normally do, I substituted splenda for the sugar and splenda blend for the brown sugar. The sauce topping didn't turn out so good so I threw it out but the pudding didn't need it anyway. Dollop of whipped cream and it was great. Also, I sliced the apples in my first batch but found it better to chop them up in my second batch. It more evenly dispursed the apples and the moisture from them.

Baked Oatmeal II

This was really good! I followed the recipe to a tee with just 2 substitutions. I used all natural applesauce in place of the butter and I used splenda instead of brown sugar. It was really good. I served it with some fat free whipped cream. The leftovers were good cold for breakfast too. You could easily substitute other dried fruits for the cranberries or even try fresh raspberries or blueberries.

Easy Fruit Cobbler

I thought this was good. I substitued splenda for the sugar. I also added vanilla and cinnamon as others recommended. I added 1/4 c of splenda to the peaches themselves. Very tasty and will make again.
