Sopapilla Cheesecake Pie

I have made this recipe for over 3 years now and it is always a hit! Agree that the sugar is a bit too much and swap it out with 1/2 cup of agave. Also prefer to cut the amount of butter, so I melt 1-2 tablespoons and coat it onto the top layer of dough. Then I sprinkle cinnamon sugar lightly on top, usually about 2 tablespoons total, just enough to leave a light brown dusting. And lastly I do sparingly drizzle honey on top when it comes out of the oven *at 30 minutes NOT 45. This is one of the best quick, easy and very much appreciated dessert!

Sell Your Soul to the Devil Eggs

I made this recipe with only minor changes, as I knew I prefer savory to sweet when it comes to eggs, I omitted the sugar and added 2 Tbsp of Dill Relish. Was irritated to discover I was out of yellow mustard, so had to use ground mustard (spice), added a heavy dash of worcester sauce. Was a big hit, first eggs to disappear off the table :)

Best Spanish Rice

Excellent! Used 1 cup of rice and a can of Rotel with lime juice instead of salsa. Stirred in a teaspoon of chili powder before covering to simmer. Turned out awesome, kids found it not too spicy and husband added some cholula-hot sauce to his. Great dish for a crowd! I have made this recipe 4 times now (3 times exactly per recipe). Try it tonight!

Pumpkin Breakfast Casserole

Great for early Christmas morning! Prepped it up the night before used brown sugar and doubled the vanilla per other recommends. Also only put whole pecans sprinkled on top, for one young picky eater. It was a big hit with entire family. Will become our family holiday regular breakfast *or any REALLY early morning with a crowd!

Sweetheart Cupcakes

Excellent recipe, easy to adapt to any occasion. I used red and blue food color gel to make red, white and blue cupcakes. Put red and blue gel lines on side of pastry bag before fling with white whipped frosting with a star tip. The entire presentation was perfect! Thank you for the cute idea!

Spinach Lentil Soup

I have made this several times now and it is loved by all. Took to a party (forgot the spinach leaves at the end) and friends thought it was a whole new recipe. Those that said they did not like Lentils went back for more! The best batches are made with FRESH salsa (home made or store bought). But even shelf friendly Pace works in a pinch. Definitely add this to your Recipe Box!

Cranberry Salad

Awesome! Had a bag of cranberries left over and was looking for something to make with it. Ironically I had all ingredients on hand, so I tried it. Family loved it, I only had granny smiths on hand and was worried about how tart this maybe so I did add 1 tablespoon of honey before adding the yogurt&whipped cream mixture. Kids ate it up and asked for seconds. Very delicious and healthy dessert quite refreshing change. Am thinking I it's red color would make this very suitable with a Valentines Day dinner as well.

Roasted Salmon with Orange-Ginger Glaze

Entire family loved it! Did double the sauce to use on chicken later this week as another reviewer recommended. Also from other reviews I did add 1TSpn Honey and 1TSpn of Soysauce. Also did not have basalmic vinegar on hand so substituted Rice Wine Vinegar. Husband was thrilled and kids ate it down without a fight! :)
