Sopapilla Cheesecake Pie
I have made this recipe for over 3 years now and it is always a hit! Agree that the sugar is a bit too much and swap it out with 1/2 cup of agave. Also prefer to cut the amount of butter, so I melt 1-2 tablespoons and coat it onto the top layer of dough. Then I sprinkle cinnamon sugar lightly on top, usually about 2 tablespoons total, just enough to leave a light brown dusting. And lastly I do sparingly drizzle honey on top when it comes out of the oven *at 30 minutes NOT 45. This is one of the best quick, easy and very much appreciated dessert!

Sell Your Soul to the Devil Eggs
I made this recipe with only minor changes, as I knew I prefer savory to sweet when it comes to eggs, I omitted the sugar and added 2 Tbsp of Dill Relish. Was irritated to discover I was out of yellow mustard, so had to use ground mustard (spice), added a heavy dash of worcester sauce. Was a big hit, first eggs to disappear off the table :)

Best Spanish Rice
Excellent! Used 1 cup of rice and a can of Rotel with lime juice instead of salsa. Stirred in a teaspoon of chili powder before covering to simmer. Turned out awesome, kids found it not too spicy and husband added some cholula-hot sauce to his. Great dish for a crowd! I have made this recipe 4 times now (3 times exactly per recipe). Try it tonight!
