Slow Cooker Chicken and Dumplings

Great dish. Went for the low fat option with low fat grands and low sodium chicken broth. Didn't use the water. I cooked the dumplings for 90 mins, added a bag of frozen vegetables and didn't have to worry about it. I used poultry seasoning but went a little light, had to salt and pepper it on the plate. 4 year old daughter and hubby loved it.

Grilled Pineapple Slices

this was delicious. We followed others and sprinkled the pineapple with the cinnamon and (we used splenda) mixture. the coconut flavor really comes through and it was delicious. Next time we will cook them longer and use more sprinkling but all in the family loved this one!

Easiest, Most Delicious Meringue Buttercream

I didn't have egg whites so I used meringue powder. Added about 1 cup of melted chocolate chips add the very end. DO NOT STOP MIXING! You feel like you are never going to get there, but eventually it turned into cool-whip like texture. Delicious!

Asparagus Soup in Seconds

Oh my! This is delicious! I'm not a big fan of asparagus soup so I got nervous and added a few extras. I skipped the broth and used cream of chicken soup, I used fresh asparagus that I steamed. Added onion powder, dill sead, soy sauce, and lemon juice based on others recommendations. I used the milk but also added some light sour cream and some boiled fingerling potatoes. Skipped the oil/butter all together. It was amazing! Will definitely make again!

Rhubarb Sauce II

SKIP THE BUTTER YOU DON'T NEED IT! Used a little more than 4 cups rhubarb, and substituted splenda for the sugar (cut the calories down by like 800 or 900 calories!) Added one big container or raspberries and one of blackberries. Followed others and added a bit of vanilla at the end, and some red food coloring. SO GOOD!

Corn Dog Muffins

These were so much fun to make with my 2 and 6 year old. We used the Jiffy corn bread mix and turkey dogs. Used 6 dogs and two mixes and found that we needed a higher ratio of hot dogs and should have cut them smaller. Served with ketchup and mustard. Super easy to make, super fun, and super cute. Will definitely make again!

Strawberry Rhubarb Sauce

Yummy! I left the tapioca out. (I just don't care for tapioca in anything) Used a little more than 4 cups rhubarb, and substituted splenda for the sugar (cut the calories down by like 800 or 900 calories!) Used fresh strawberries (the big container from Sam's or Costco) I think it's two pounds. (Halved and then used the egg slicer to cut them smaller) Followeed others and added a bit of vanilla at the end. Not as good warm as it is the next day cold. Seemed like too much water, but the next day was just right.

Scott's Buffalo Wing Sauce

This was great! I left out the butter and added garlic powder, a squirt of ketchup, the honey and hot sauce as in the recipe. It was tangy but had the right amount of heat. Used for buffalo chicken wraps. Next time I'll skip the ketchup all together. My husband thought it was too much flavor, but I think he just had too much sauce on his wrap.

Minute® Rice Lasagna

Surprisingly good. I was skeptical. I added more rice like others mentioned. Used cottage cheese and a little dab of sour cream. Only had fat free mozzarella but worked well. I also used ground chicken and egg beaters to make a little more healthy. Filled to the top of my 8x8 pan. Hubby and kids ate both gave 5 stars!

Slow Cooker Taco Soup

Didn't have tomato juice so I substituted enchilada sauce (two cans) added green chilis (one can) skipped the black olives. This was delicious served with tortilla chips on the top. Yum!

Rotisserie Chicken

YUMMY! Rivals any store bought/restaurant rotisserie Chicken. Added poultry seasoning, garlic, and seasoning salt to the mix. Also used olive oil instead of butter. Took 1.5 hours at 300 degrees. Tied wings and drumsticks together, and then the drumsticks to the body. Family loved the crispy skin. I had brined the chicken for something else and then decided to grill with the nice weather. Don't know what the 4 hours of brining did, but the end result was fabulous!

Daddy's Whisker Soup

Delicious! It was like au gratin potatoes in a bowl. My husband would have liked ham (maybe wild rice too). Next time we'll add a meat. I halved the recipe but used the whole 16 oz of cheese. Saved one cup of the potato water to use instead of 1 cup of milk. Followed others and used 2 tbsp salt and 1 tbsp pepper in the water with a whole onion. (added a dash of poultry seasoning too). Added the dill at the very end and could have used a little more. My 5 year old loved it too. Great!

Roasted Grapes and Carrots

Excellent! Was a little nervous about the combination, but so surprised at how good it was. I will definitely be making this one again. Didn't have red onion so I used yellow and it added a nice color contract. My 5 year old even loved it. I steamed the carrots for 8 minutes ( baby ones cut in 3rds) then cooked at 45 for 20 mins but the carrots were still undercooked and the grapes over cooked. I will steam more next time and cook less with the grapes. Wonderful, easy, and healthy!

Turkey a la King

wow! Presentation, Taste, Kid Friendly, and Ease of Making all get 5 stars on this one. I used the pre-cooked chicken, heavy cream (I did have to add a lot more flour to thicken it to the level I liked) Made it for 6 puff pastries. Added a little garlic and cut the butter in half. Did add a little poultry seasoning with the salt and pepper. Used the frozen mixed vegetables that you steam right in the bag, and everyone loved it. Great! Will definitely make again!

Tortellini Soup I

This really is delicious. I used the hot italian sausage and I didn't think it was too hot. I didn't have carrots so I used a sweet potato cubed up. I also had only chicken broth. Two cans of diced tomatoes with basil, garlic, and onion already in the can. My package of fresh tortellini was bigger than called for so my only mistake was not having enough liquid. Next time will use more broth. It was great!
