Slow Cooker Chicken and Dumplings

Reviewed: Oct. 12, 2009
Great dish. Went for the low fat option with low fat grands and low sodium chicken broth. Didn't use the water. I cooked the dumplings for 90 mins, added a bag of frozen vegetables and didn't have to worry about it. I used poultry seasoning but went a little light, had to salt and pepper it on the plate. 4 year old daughter and hubby loved it.

Broccoli Ham Ring

Reviewed: Oct. 12, 2009
I've made this now with ham and broccoli, or turkey and swiss, pretty much any cheese and any meat will work. I alternate the triangles to that all the tips aren't pointing in. Some of the layers double up on crust but seems to hold together better. I cut it with the pizza cutter. My 4 year old loves to help make it too.

Healthy Banana Cookies

Reviewed: Oct. 12, 2009
Very good. Used raisins instead of dates and substituted apple sauce for oil. Need to use parchment paper to bake though, I ran out on one pan and they stuck badly. My 4 year old loved them too. Great healthy snack to use old banana's for.

Banana Sour Cream Bread

Reviewed: Nov. 4, 2009
Great bread, but like others I made a few changes... I made two loaves out of the recipe and had to bake at 325 for an hour and 10 mins then at 300 for another 30 mins or so to get the center done. The crust didn't burn but was hardened. Substituted cinnamon applesauce for the butter and 1.5 c of splenda with 1.5c of sugar. Also used fat free sour cream, and eggbeaters, was delicous warm, haven't tried it cold yet!

To Die For Blueberry Muffins

Reviewed: Dec. 6, 2009
Great recipe! I followed the advice for the brown sugar crumb topping and substituted fresh cranberries for the blueberries. They were better than store bought muffins. I used a little splenda and applesauce for the oil. YUM! I'm gonna try this with apples next! I only got 6 muffins so I want to triple the recipe and then just add different fruits!

Foolproof Chocolate Fudge

Reviewed: Dec. 10, 2009
Great and easy recipe. I did one batch with half semi sweet and half milk chocolate. And for me (I don't like chocolate) I did white chips with green food coloring and mint extract instead of vanilla. Turned out delicious. I lined the square pan with parchment paper and they came out great!

Caramels

Reviewed: Dec. 10, 2009
I must have done something wrong. I calibrated my thermometer in boiling water first. I took my time heating the mixture (about 55 minutes) I tested and re-tested all the time for the right stage of candy. When I dumped it on the cookie sheet (pre-heated in the oven) I spread it and waited. When I cut them they were chewy and delicious. As they rested over night wrapped they turned into hard sugary squares. Like eating a brown sugar cube. What could have changed??

Jif® Peanut Butter Blossoms

Reviewed: Dec. 10, 2009
A family favorite. Don't put the kisses on too quick or they melt too much. I put them on and then put the entire pan outside (it's 4 degrees here) so the bottoms melted but not the kisses.

Mom's Best Peanut Brittle

Reviewed: Dec. 10, 2009
Delicious! All the advice helped a ton. I put a bit too much brown sugar in by mistake and they turned out great. I like that the brittle isn't light like other recipes I have tried. Looks store bought!

Prosciutto and Parmesan Pinwheels

Reviewed: Dec. 16, 2009
Had to use shredded cheese but it fell to the bottom, slices would be better. Didn't have the right dough so I used crescent roll sheet from pillsbury. Turned out great. Used honey mustard and honey ham and it was great!

Rainbow Salad

Wonderful dish to bring to Christmas Dinner. My 5 year old loved helping me with the colors and mixing. A great way to spend a Saturday afternoon! We made two at a time and everyone liked the milky ones better! Next I will make in a jello mold as it was hard to get to the bottom of the trifle dish.

Triple Layer Banana Cream Pie Bars

Reviewed: Jan. 24, 2010
Made this with my 5 year old so it was a great activity together. Made it in a pie pan instead and added a little more margarine to hold the crust together. Skipped the nuts and made the first layer an 8oz package of fat free cream cheese with 1/2 c powdered sugar (mixed together) then I chopped my bananas for the next layer (mixed with a bit of lemon juice to not turn brown, then sugar free fat free banana pudding, then the pudding/lite cool whip combo, then light cool whip by itself. Hubby said it's the best banana cream pie he's ever had! Will definitely make again, next time might try the cream cheese and then cheesecake pudding?!

Maple Praline Bacon

Reviewed: Feb. 14, 2010
Yum! Great for a dinner party as a conversation starter. Better to lay the bacon on parchment paper and then drizzle the mix over it, then add chopped/toasted pecans quickly... Didn't feel that there was enough to dip it in, could double the drizzle if you wanted extra. Delicious!

Amish White Bread

Reviewed: Feb. 15, 2010
Only made one loaf using the bread machine to mix and rise the dough. Kneaded and rolled out, added brown sugar, cinnamon, and plump raisins. Rolled and let rise, baked for 28 minutes, but center wasn't done, put it back in for another 10 mins. covered with foil. Delicious! Next time more cinnamon and add frosting
