Easiest, Most Delicious Meringue Buttercream

I didn't have egg whites so I used meringue powder. Added about 1 cup of melted chocolate chips add the very end. DO NOT STOP MIXING! You feel like you are never going to get there, but eventually it turned into cool-whip like texture. Delicious!

Coconut Shrimp I

Fantastic batter! Also used it to make some coconut chicken! If the batter starts to get a little thick as you are working just add a little more beer (since there is still some left in your can/bottle) Also, place the shrimp on the wax paper in the freezer for about 15 minutes before cooking. THis way the coconut will not fall off so much when you cook them.

Hawaiian Ham Skillet

This was good. Not great, but good. I liked the sauce and plan to use this in asian dishes in the future. I used Deli mustard with horseraddish and white wine vinegar. I didn't have peppers so I used julienned carrots, green onions, and water chestnuts. Kids liked the pineapple but by they end were pushing the food around on their plate. I think the sauce would be good over just vegetable stirfry.

Italian Nutthouse Broiled Tomatoes

This was good, but I overcooked it so the tomatoes were too mushy and think it would be better with a semisoft cheese on top. It definitely doesn't work with a "melty" cheese on top. Too hard to cut through. Will make again but maybe with a goat cheese? Great use for all those fall tomatoes.

Pillow-Soft Dinner Rolls

Corn Dog Muffins

These were so much fun to make with my 2 and 6 year old. We used the Jiffy corn bread mix and turkey dogs. Used 6 dogs and two mixes and found that we needed a higher ratio of hot dogs and should have cut them smaller. Served with ketchup and mustard. Super easy to make, super fun, and super cute. Will definitely make again!

Lemon Parmesan Spaghetti

Oh My!! This was Delicious!! I had something similar at a gormet restaurant and this was better! I did tweak a bit. Skipped the butter to be healthier, used less sour cream. I had some fat free whipping cream so I added about a cup of that but could probably get by with milk. Grated the outside of one whole lemon, and used the juice of two whole lemons. Added broccoli and used a whole box of Penne Pasta. Didn't have parsley so I used fresh cilantro. It was a great main dish and gone!

Sopapilla Cheesecake Pie

Oh my goodness this is so amazing. Had to bake it a little longer than 30 minutes. Didn't add the honey until it was cut and on the plates (I don't care for honey) Where has this been all my life. Super super easy! I used the crescent roll sheets and they fit a 9x13 pan perfectly, didn't really have to roll or spread them out. Used a glass pan and sprayed with Pam before hand.

Strawberries Flambeed in Vodka with Hot Ice Cream

Well, this was really interesting. Made it for company and all liked it but me. The ice cream really is hot! and cold. It's so unique. Each one by themselves isn't good, but if you get both in a bite it's good. We used 99 bananas as the vodka to give it that strawberry banana flavor. It flambeed great and definitely was a crowd pleaser. Served little sundaes in martini glasses. Eat immediately or it all melts into a soupy mess. Next time I will cool the strawberries a bit.

Asian Lettuce Wraps

this was really good. I skipped the rice and added water chestnuts. I also added a little water to the mix as it was really sweet and dry. I used the Boca Crumbles which were delicious! Added a dash of ground ginger too. Whole family loved it, a bit salty but the juicy lettuce was great with it. My 6 and 2 year old were fans as well. Super healthy and super easy!

Italian Chicken Sausage Risotto

This like any risotto is delicious. I also added some granny smith apple for a little punch and it was great! Used some skinless apple chicken sausage and it held up well. Definitely a keeper!

You must make the dipping sauce recommeded by others. 2 parts hoisin sauce to 1 part chunky peanut butter. Heat on the stove until mixed and add a bit of water to thin. Delicious reason to eat the spring rolls.

CheddarWurst® and Apple Kabob

These were good. My 6 year old wasn't a huge fan. I have made them twice and the sauce is the best part. I didn't use CheddarWurst. I used mini gourmet chicken sausages. First time I alternated on the kabob and grilled. second time did kabobs of all apple, all meat, etc and broiled on the oven. Threw all in a bowl at the end. It was just easier. Would make again.

These were absolutely delicious! I added more ginger and followed others with some green onions. My biggest challenge was getting the lettuce leaves off without breaking them. Might tr different lettuce leaves in the future. Omit the sugar too.
