Simple Fruit Pizza

Used the pre-made cookie dough from the local bakery on full cookie sheet. Doubled the recipe worked great for that size. Used mango, kiwi, grapes, blueberries, strawberries, plums, and nectarines. After I spooned some fruit glaze over the top instead of the jelly. Made the night before and it held up in the fridge okay wouldn't make it any earlier though or it would get soggy. Everyone loved it!

Pumpkin and Sausage Soup

This tasted like a pureed pancake breakfast with maple syrup and sauage links. Not bad, just not what I was expecting. Definitely something different. I subbed real maple syrup so maybe that's why it was too sweet for me. I also used sweet potatoes (but they might have been yams) Pureed with my immersion blender and worked great. Next time I will cut the maple syrup and brown sugar in half. Used the pre-cooked sausage crumbles. Worked great!

Seared Scallops with Pineapple, Ginger and Lemon Grass Salsa

OMG! SOOO Good. Eveything about this recipe is deliciousl Tried not to alter but had to use what was on hand. Asparagus instead of beans, Canned crushed pineapple (still really good). No lemongrass or vinegar, so we used cooking sherry and lemon juice. And I skipped the oil all together for health reasons. Used PAM high heat grilling spray on the frying pan and still got a nice sear. Added a little extra heat and it was wonderful!! Will definitely make again!

The Best Thai Coconut Soup

I really liked this recipe, but Jason wasn't a huge fan of the mushrooms. Get the dried shitake ones in the asian aisle. Would like to try again with lite coconut milk. Added baby corn and would like more vegetables next time. Could be spicier Used the pre-cooked salad shrimp Will make again just so I can use the fish sauce. Kept the lemon grass whole and just retrieved them after simmering and grated the lime peel right into the soup also used ginger instead.

Brownie Batter + Cupcake = The SECOND BEST Cupcake. Ever

These were fairly easy to make. I followed others advice and filled the cupcakes half full with cake mix then piped the brownie mix inside. The brownie mix was really runny so the piping bag sort of dripped as I did it. Covered with chocolate canned frosting but would like to try the peanut butter frosting. I used yellow cake mix and brownie mix. Substituted applesauce for the oil and used egg beaters. Fun for the kids to make for sure!

Easy OREO Truffles

Made three flavors, the oreo as described, one with vanilla wafers as the cookies and some powdered sugar, and one with crushed andes mints and some chocolate flavored cereal to help with thickening the texture. Used two plastic forks for dipping and kept the chocolate on the stove in bowls over simmering water. Blended all in the food processor and chilled the mix before even rolling. Then froze prior to dipping. ** Only mistake was putting them on a wire rack to dry. Too hard to get off! should use wax paper ** Placed them in little shiny candy cups. The white and milk chocolate made them look like I had made several varietys. you can check pic.

Roasted Cauliflower Soup

Used the big container of chicken broth instead. Accidently added too much white pepper. Delicious! Next time will save some of the cauliflower and add back in at the end just for texture. One kid loved it, one kid hated it though.

Cordon Bleu Soup

The best soup we have ever made! I doubled the recipe for a potluck and we still had some left over. Added white pepper and extra soy milk just to thin it out a bit but other than that, stuck with the reciped and it was delicious! Hubby and kids (8 and 3) absolutely gobbled it up!

Pineapple Casserole II

This was such a strange combination but really good. My only complaint is that it is too unhealthy for our family to eat so we made it for a potluck and then no one knew if it was dessert or a main dish. Had only crushed pineapple on hand but it still worked well. Used splenda too but still too much butter and ritz crackers are not that healthy. Why must all unhealthy foods taste so good! ??

Grilled Pineapple Slices

this was delicious. We followed others and sprinkled the pineapple with the cinnamon and (we used splenda) mixture. the coconut flavor really comes through and it was delicious. Next time we will cook them longer and use more sprinkling but all in the family loved this one!

Pavlova's Pavlova

I made with splenda and it was definitely too sweet. Next time I would only use 1/2 cup of splenda and I thought it was good plain. Used fat free cool whip and mixed berries (frozen then thawed) so the tart of the berries helped offset the sweet. Interesting consistency though. Will try it again, not a lost cause for me.

Crepes

Very good. Next time I would add a little more milk to make them a bit runnier. Just used a whisk and didn't let them set in the fridge at all. Had some small lumps but didn't affect the taste. Also turned them Green for St.Patrick's day and the kids loved them.

Cola Cake

Wow! I did two rounds of White cake mix with a can of diet root beer. I put a can of crush pineapple (drained well) at the bottom of one and a whole container of light cool whip between them. So it was like a pineapple upside down cake. Next time will put Pineapple on both layers. Didn't let it cool too long and it broke apart and became more of a cobbler (read serve with a spoon) but still delicious!! Everyone loved it warm and cold.

Ed Zieba's Famous Family Pork Chops

Loved this recipe! Husband said the best pork chops we've ever had. Was nervous about the little water but a ton of juices came from the meat so it wasn't dry. I cut off the fat from the chops and the ones with more fat were actually better. I used boneless though. I love how there isn't any added butter or stuffing. Used one big yellow onion on top. Seasoned with garlic powder, poultry seasoning, salt, petter, seasoning salt. Turned out great!

Simple Roasted Chickpea Snack

Super Easy to make. Put all ingredients in a gallon ziploc bag and shook the peas to coat. Used three cans and didn't double all of the spices (probably should have) needed more salt and probably chili powder. Baked at 450 for 20 minutes, then 300 for 40 minutes. Crunchy through and through. Kids loved them too. Ready to try them with other spices now too... ranch? Buffalo? BBQ? The possibilities are endless.

Tortellini Soup I

This really is delicious. I used the hot italian sausage and I didn't think it was too hot. I didn't have carrots so I used a sweet potato cubed up. I also had only chicken broth. Two cans of diced tomatoes with basil, garlic, and onion already in the can. My package of fresh tortellini was bigger than called for so my only mistake was not having enough liquid. Next time will use more broth. It was great!

Super easy.. Used quart size ziplocs baggies to pipe the batter into the jumbo foil cupcake liners. Don't overbake, and they turn out delicious and really really adorable!

Easiest, Most Delicious Meringue Buttercream

I didn't have egg whites so I used meringue powder. Added about 1 cup of melted chocolate chips add the very end. DO NOT STOP MIXING! You feel like you are never going to get there, but eventually it turned into cool-whip like texture. Delicious!

Coconut Shrimp I

Fantastic batter! Also used it to make some coconut chicken! If the batter starts to get a little thick as you are working just add a little more beer (since there is still some left in your can/bottle) Also, place the shrimp on the wax paper in the freezer for about 15 minutes before cooking. THis way the coconut will not fall off so much when you cook them.

Hawaiian Ham Skillet

This was good. Not great, but good. I liked the sauce and plan to use this in asian dishes in the future. I used Deli mustard with horseraddish and white wine vinegar. I didn't have peppers so I used julienned carrots, green onions, and water chestnuts. Kids liked the pineapple but by they end were pushing the food around on their plate. I think the sauce would be good over just vegetable stirfry.
