Simple Fruit Pizza
Used the pre-made cookie dough from the local bakery on full cookie sheet. Doubled the recipe worked great for that size. Used mango, kiwi, grapes, blueberries, strawberries, plums, and nectarines. After I spooned some fruit glaze over the top instead of the jelly. Made the night before and it held up in the fridge okay wouldn't make it any earlier though or it would get soggy. Everyone loved it!

Pumpkin and Sausage Soup
This tasted like a pureed pancake breakfast with maple syrup and sauage links. Not bad, just not what I was expecting. Definitely something different. I subbed real maple syrup so maybe that's why it was too sweet for me. I also used sweet potatoes (but they might have been yams) Pureed with my immersion blender and worked great. Next time I will cut the maple syrup and brown sugar in half. Used the pre-cooked sausage crumbles. Worked great!

Seared Scallops with Pineapple, Ginger and Lemon Grass Salsa
OMG! SOOO Good. Eveything about this recipe is deliciousl Tried not to alter but had to use what was on hand. Asparagus instead of beans, Canned crushed pineapple (still really good). No lemongrass or vinegar, so we used cooking sherry and lemon juice. And I skipped the oil all together for health reasons. Used PAM high heat grilling spray on the frying pan and still got a nice sear. Added a little extra heat and it was wonderful!! Will definitely make again!
