Cocktail Meatballs

I'd give the recipe as-is 4 stars but after adding a bit of extra lemon juice, cutting the brown sugar in half, and adding about a half teaspoon of Tabasco (enough to add some depth but not enough to make it spicy), the sauce was perfect! I doubled the recipe and added a couple cloves of garlic as well as some Worcestershire to the beef (because I don't think I've ever made anything with ground beef without garlic and Worcestershire). They were a hit, people were sopping up the sauce with bread and crackers after all the meatballs were gone!

Country Sunday Breakfast Casserole

Good basic casserole recipe - next time I would skip the gravy mix because we all seasoned it with hot sauce and ketchup, I think it kind of masked the flavour. I would also increase the eggs so it wasn't so heavy on the sausage - maybe 10 eggs to 16 ounces of sausage. I added an onion and a clove of garlic to the sausage as it was browning, then browned the hashbrowns in the sausage grease. Very good - will definitely make again!

Clone of a Cinnabon

Really delicious! I was worried there wouldn't be enough filling as I was assembling them but it turned out to be perfect after I baked it. I followed other users' advice and mixed the filling ingredients together and spread on the dough. I upped the butter a little to get it to mix properly but probably wouldn't again - it took some of that great chewiness out of the filling. I also turned the whole pan upside down when they came out of the oven so the drippings coated the buns and it was soooo much better. The frosting was tasty but there was a bit too much of it - I'd cut it in half next time. Will make again for sure!

Cucumber, Tomato and Red Onion Salad with Mint

I really liked this salad. It would go perfectly with simple BBQ chicken or pork. I only had a teensly bit of red wine vinegar left so I filled out the rest with cider vinegar and it still tasted great. Will make again, good way to use up fresh mint!

Quinoa Vegetable Soup

This was pretty good. I added some zucchini I had to use up, some crushed red pepper flakes for extra spice, and some fresh basil, and I doubled the garlic. A simple vegetable soup, great for lunch.

Chewy Chocolate Chip Oatmeal Cookies

These were very good. I took everyone's advice and added 1/4 cup of flour and reduced the salt a little. Next time I will also reduce the vanilla - possibly because I used real vanilla but it was very overpowering. The cookies didn't spread too much, stayed wonderfully soft, and had a good flavour. Will make again with adjustments. Thanks!

Country Apple Dumplings

We made these for dessert the other night and they were amazingly delicious. Fairly easy to put together and were a hit with everyone. Great Served with ice cream. These are my family's new version of apple pie!

Peruvian Chicken Soup (Aguadito de Pollo)

This was so delicious. Next time I will try to use homemade chicken broth as mine was a little too salty, but the cilantro flavour was great. Like other reviewers said the rice absorbed a lot of water and the leftovers were sort of mushy but it still tasted great. Will definitely make again, and next time I'll double the serrano since we could barely taste it!

Smoked Paprika Vinaigrette

This was pretty good but we had to add more sugar - the vinegar was very strong. We served it with a green salad with sunflower seeds, apple, and dried cranberries. It's a great colour and flavour, will make again! Thanks!

Pumpkin Spice Cupcakes

I made these for Canadian Thanksgiving dinner and decorated them like pumpkins. The icing was great but I only used about half the icing sugar and it was plenty sweet. I also used oil instead of butter in the cupcakes as other reviewers suggested and they were very moist. My family enjoyed these, thank you.

Creamy Peanut Butter Fudge

This was great! I boiled it for about 7 and a half minutes and used marshmallows as I couldn't find the creme at my store (I put in about 28 large marshmallows). I put the marshmallows in while it was still quite hot (I don't have a candy thermometer so I just kind of guessed) because I was afraid they wouldn't melt, then I let it cool down a bit more and put the peanut butter and vanilla in. It worked perfectly! Definitely will make again. Thanks!

Addictive Sweet Potato Burritos

These were excellent. I made them as written except I used black beans as we prefer them. Next time I won't mash the beans as I think whole beans would be a good contrast to the texture of the mashed sweet potato. I scaled it down to 4 and had enought filling for 6 burritos - we froze two and ate some cold the next day for lunch, which was great. Served topped with homemade salsa, sour cream, cilantro, and additional cheese to taste.

Spicy Mango Sweet Potato Chicken

This was delicious - I made it exactly as written, except I doubled the garlic and used mango honey from the Farmer's Market. It was the perfect heat and the flavours went so well together. My only complaint is that this is not 5 servings - there were 5 of us and pretty scant portions each. Regardless, this is being added to my dinner rotation - it got rave reviews from everyone who ate it! Served with white rice and a spinach salad on the side.

Bean Salad

This was quite good! My boyfriend made it for just the two of us, so we used one can of 6 bean blend and scaled everything else down. It had a great spicy flavour and the corn was the best part, a great contrast to the texture of the beans. Next time I'll add cilantro, I think it would go perfectly.
