Last night I took part in the Meatless Monday movement, kind of by accident. My boyfriend’s family is all either vegan or vegetarian, and as we are trying to save money and eat healthy we often have vegetarian meals at home as well. So while we don’t make a concerted effort to have meatless meals on Mondays in particular, we usually end up eating veg at least once a week. This week it happened to fall on a Monday! (Although for the sake of full disclosure.... I had completely intended to make pork for dinner, and then forgot to get it out of the freezer the night before, so we went veg.)
When I was growing up my mom put meat in every meal. My dad and my sister are “carnivores” – they would eat nothing but meat if it were up to them. I used to be really picky about meat – even now I cook way more chicken and fish than anything else, though I am becoming acquainted with pork, and ground beef is always a favourite. I used to think you couldn’t make a meal at home unless you had some meat defrosted (my mom bought all meat in bulk and froze it in smaller packages – I do the same). So when I first moved out it was kind of a surprise to my boyfriend and I could make a whole meal without pulling any meat out of the freezer! However, now I’ve learned to do the same. We often adapt meaty meals to be vegetarian – soups, chilis, casseroles, and especially pasta dishes.
Last night I made Vegetable Cutlets, Sweet Potatoes and Apples, and J.P.’s Big Daddy Biscuits. It was delicious! The vegetable cutlets in particular were much loved. Next time we might try making them with beans instead of potato – they are definitely part of our rotation now.
Eating meatless saves money and is actually good for the environment as well – raising livestock is one of the biggest polluters on Earth today. What are your most successful vegetarian meals? I’m looking to reduce our meat intake even more!

what are vegetable cutlets??? I like the tasty lentil tacos here on AR - our fave veg meal
Jun. 1, 2010 12:21 pm Sorry I meant to include the link in the blog, I just forgot - they're just patties made of potatoes, carrots, beans, corn, and peas, mashed together with an egg and dipped in breadcrumbs, then pan fried. While making them I thought they might do well as veggie burgers, but after trying them they are definitely not good for that - not the right texture, it would be like putting mashed potatoes on a bun. They tasted delicious on their own though!

thanks!!! I have tried a few vegetarian patties (and will be tryng one tonight) but havent liked any so far. I will have to try these!

I am afraid I am a carnivore, I cant do a meal without meat! The closest I get is when we have fried egg, chips & beans for dinner!! Although my fav pizza is vegetarian!!

About Me
I'm a 22 year old novice cook - I live with my boyfriend in a small apartment with a teeny kitchen. Right now I'm trying to eat healthier and cut some meat out of my diet - I'm writing a blog about cooking my way through a vegetarian cookbook! My favorite family cooking traditions
When I was little my mom taught me how to make brown sugar syrup for our homemade pancakes - everytime she made pancakes at home, I would make the sauce to go with them.
My cooking triumphs
Lasagna Day - My first ever dinner party in my apartment, I made spinach salad, stuffed mushrooms, lasagna from scratch, and apple crisp. It was a hit with my friends, I got so many compliments!
My cooking tragedies
When I was in high school I decided to make some cinnamon buns, but the only recipe I could find was a huge batch, so I cut it in half. However, when I went to mix the ingredients, I found myself adding the full amount of some but only half of others, and I couldn't remember how much of each I'd already done. I tried cooking them anyways, but they were terrible!
