Garlic Chicken

Reviewed: Jan. 15, 2012
Not a lover of chicken, but decided to try it with some of the suggested modifications from other viewers. I think I probably should have stuck with the original recipe. I used panko bread crumbs, and used ziplock bags to coat the chicken with oil and the breadcrumb mixture. The resulting coating was not that great...it just didn't cover much of the chicken and didn't get very brown and crispy. It wasn't that flavorful even though I also added pepper and Italian seasoning. However, my picky husband liked it and had seconds, which is often more telling of how good a recipe is. So take my review with a grain of salt, I don't really like chicken to begin with and didn't follow the recipe exactly. I will make it again to see if I like it better with the original recipe.

Prime Rib Roast

Reviewed: Dec. 30, 2011
I have made this twice...once with an expensive cut of prime rib, and another with a cheap one. Either way it was really good. With the more expensive cut, my sister (who is a connoisseur of prime rib) said this was "restaurant quality". Even the cheaper cut got a "pretty good" from my brother, who hates everything. The marinade is amazing. I added water and flour to the pan afterwards and made gravy out of it...that was the best part. Especially if the cut isn't that great, it is nice dipping sauce. Fantastic!

Hearty Roasted Chicken and Sausage

Reviewed: Dec. 30, 2011
Although the recipe seems pretty bland, this was actually really good! My husband is very picky, and he liked it and would eat it again. I halved the recipe and made it for me and my husband. I used hot sausage, added whole mushrooms, sliced garlic and green onion, used extra Italian seasoning, topped with fresh ground pepper, and put some Cholula on the chicken. I think I might try it with chicken breasts next time, though, since bone in chicken is annoying to eat. Will definitely be making this again!

Roasted Kohlrabi

Reviewed: Jul. 11, 2010
This was also our first kohlrabi, from the CSA- didn't know what it was and had to look it up! I pretty much followed the recipe, and it turned out great. Very tasty. Has a pleasant, sharp flavor. My only issue was that they ended up kind of soggy, but they still tasted really nice.

Baked Spinach

Reviewed: Jul. 7, 2010
I made this dish using RivertownMom's basic changes- sauteeing garlic and spinach (to wilt it), mixing the flour with the eggs and milk, adding parmesan cheese to the top, a little extra cheese, etc. I also added sauteed mushrooms, butter on top, extra sharp chedder cheese, and went without onions since I didn't have one on hand. Although it's not a bad way to introduce spinach into one's diet, even with the modifications it was still kind of bland. I have to admit I'm not a great cook, so I wouldn't know what kind of spices to add in order to make it taste better. I used it more as the main meal rather than a side dish (served with potatoes and carrots)- definitely better as a side dish with a tasty main dish (like steak or something). My husband had seconds, but he didn't comment on it like he does with other recipes I try, so it was probably mediocre for him as well. It was pretty "spinachy". I did notice that it had more flavor as it cooled off a little. We practically ate it right out of the oven. As an update to the above review, this dish was actually quite tasty as leftovers...much more flavor when reheated.

Cheese Ravioli with Fresh Tomato and Artichoke Sauce

Reviewed: Sep. 20, 2009
I followed many of the suggestions in the reviews. I used fresh roma tomatoes, but I think it was a little bland. Hubby liked it more than I did. I'm not a huge fan of jarred artichokes, which probably affected my enjoyment of this recipe. If I made it again, I would use freshly grated parmesan instead of the pre-grated stuff in the container.

Chicken and Broccoli Alfredo

Reviewed: Sep. 20, 2009
Although hubby really enjoyed this, I found it to be pretty bland and didn't think much for the cream of mushroom alfredo sauce. I even used garlic whole wheat linguini, sauteed the chicken with garlic and spices, and added sauteed fresh mushrooms. I probably won't make this again.

Slow Cooker Cranberry Pork

Reviewed: Sep. 11, 2009
I loved this, hubby liked it (but he's fussy so he doesn't count). One of the best dinners I've ever made. I incorporated many of the comments from other reviewers. I browned the pork loin in oil, garlic, pepper first. Although I used onion in the sauce, I removed it at the end (4 hours on high) since neither one of us like it. I thickened the sauce with flour and used it as a gravy. So tender and tasty! This is a keeper and I will be making it again. Did I say how easy it is? I served it with cornbread and steamed asparagus. I only used a 1.5 lb pork loin.
