Carrot Cake III

My standby carrot cake. I also add shredded coconut, because I love it. Sub applesauce for vegetable oil for a bit less fat and good, moist flavor. This makes great carrot cake cupcakes.

Double Chocolate Chunk Cookies

Great cookies, very very rich. Instead of store-bought chocolate chunks, I break up nice chocolate bars into chunks, combining milk and dark chocolate. You could also add white chocolate, if you'd like. Very decadent.

Becky's Sugary Sugar Cookies

I made these as directed and also added almond extract to make them almond-flavored. Then, I flattened the cookies with a sugar-coated glass. Delicious!

Thai-Inspired Confetti Salad

I make this salad all the time but add more fruit (all of the tropical variety, whatever's at the store, usually pineapple and sometimes some peaches too. My current roommate is allergic to papaya, so I've been improvising lately). The longer it sits, the spicier it gets. Because I can't always get the fish sauce for the dressing, I usually make up my own using the juices from an orange, lemon, & grapefruit with fresh ginger, rice vineager, and a little sugar.

The Best Rolled Sugar Cookies

My stand-by roll cookies. Baking a batch as I write! Everyone loves them! Be sure to cool for AT LEAST an hour. Also, I recommend throwing your rolling pin in the fridge too.

Arrabbiata Sauce

Very flavorful! We added extra veggies too, because we like chunky sauce. It's a little watery, we found, so definitely stick with Penne. Good and spicy. Added extra red pepper flakes.

Tuna Curry in a Hurry

I make this a ton when I don't have a lot in my cabinets. I usually add whatever veggies I have (often frozen spinach) too. To those of you having trouble with thickening, add some corn starch until it's thick enough for you.

Lentil Rice and Veggie Bake

My roommates and I really didn't like this. Well, 1 of them said it was "alright". We added extra veggies (other squash and things from the farmer's market) as well as extra herbs and cheese as suggested by other reviewers and found it exceedingly bland and dry. So bland, in fact, that I will not be making this recipe again.
