Luck o' the Irish Brownie

Reviewed: Mar. 17, 2013
I did not care for these, I followed the recipe and had to bake longer than what the recipe said. It's only saving grace was the mint frosting and chocolate topping.

Stabilized Whipped Cream Icing

Reviewed: Sep. 7, 2012
I don't know what I did wrong but this did not work for me. I read through a lot of reviews and figured I could make this work. I was wrong. before I even microwaved the water gel mix it had solidified. and started to harden before it cooled (I did not microwave for the instructed time) and ended up with clumps of gel in my icing. I'll keep searching for a different recipe!

Warm Apple Pocket

Reviewed: Sep. 7, 2012
I made my crust from scratch and added a bit of sugar and cinnamon to to it and omitted the salt and only used cinnamon in the apple pie filling as I do not have apple pie spice. I also made a glaze for the top and added it after the pockets had cooled for a bit. so yummy! My oldest step-son who does not care for apple pie was begging me to make them again!

Red Velvet Cupcakes

Reviewed: Sep. 7, 2012
These were very good after I modified the recipe a bit. I used half the amount of cocoa powder, the first time I made it it was too chocolate-y for red velvet. added an additional 1/4 cup of flour and used brown sugar instead of white. I'd given both this recipe and my modified one for someone to sample (I'd never made it before) to choose between for a batch of cupcakes and they chose my modified one:)

White Cake with Lemon Filling

Reviewed: Aug. 17, 2012
I used this as a base for my recipe and tweaked it quite a bit and it turned out really good. I used 1/2 cup butter (your could use shortening like the recipe states), 1 1/2 cup white sugar, 4 egg whites, 2tsp vanilla, 2 cups of flour, 1 tsp salt, 1/2tbsp of baking soda (no baking powder), reduced the milk to 3/4 cup and used 3/4 cup of sourcream. First I whipped butter and the sugar together. added the egg whites 1 at a time. incorporating each after each addition. Then I whipped the batter on high for 2-3 minutes until nice a fluffy. Then mixed in the vanilla. In a separate bowl I combined the flour, salt and baking soda. I alternately added the flour mixture with the sourcream, incorporating each addition before adding the next. I scalded the milk and slowly added it to the batter. looking forward to tweaking it more for different flavors!

Quick Fudge Icing

Reviewed: Jul. 10, 2012
I'd never made fudge icing before but wanted a fudgy type topping for my homemade brownies. This was very good on brownies. I stirred till thickened like the directions said then pour immediately over my pan of 13x9 brownies. I also read other reviews that said to cook on low til the sugar is desolved, that solved any grainy-ness problems. (similiar to cooking flour off when making roux). I will def make this again!

Classic Creamy Coleslaw

Reviewed: Jul. 10, 2012
I'd never made coleslaw before, I had all the cabbage and carrots shredded and was going to make a different recipe on here but decided last minute to look at different recipes. So glad I did! I cut up 1 head of green cabbage and 1/4 of purple cabbage and made half of the mayo mixture. It covers it nicely! I also added 1 tbsp of lemon juice to it, I like the citrus flavor in my slaw.

Chicken Cordon Bleu II

Reviewed: Jun. 26, 2012
I made this for my husband and I, I'd only had chicken cordon bleu once at a restaurant and it was delicious and the 2 times he'd tried it he said the chicken was very dry and tasted awful (not at a restaurant). but I knew I could change his mind about it! and I did! He said "You can make this anytime!" I followed the recipe with an exception for the butter, I used olive oil! pounding the chicken to a 1/4 thickness first really helped to wrap it up arounds itself and cuts down on the cook time! after browning it I only cooked it for 15 mins and it came out perfect!

Best Brownies

Reviewed: Jun. 25, 2012
These were very tasty. I whipped these up in no time when my step-son was asking for brownies after dinner one day. This is my 3rd time making brownies from scratch (I've decided to go scratch from now on! no more boxed mixes) and the first two attempts tasted good but didn't look great. These came out looking and tasting amazing! I like how they taste great straight from the oven and the next day! boxed mixes really only taste good the next day. Having said that I did do things a bit different. I mixed 1/2 cup of white sugar and 1/2 cup of brown sugar in a medium mixing bowl, in separate container I used an electric hand blender to beat the eggs and added the vanilla on top of the eggs (not mixed in) and in another small container I mixed the flour, cocoa powder, baking powder and salt. Then I melted the butter in the microwave, poured it over the sugar mixture and added the eggs and vanilla and stirred it all together, then added all the flour mixture at once and stirred just until combined. I guess 3rd times a charm! This recipe is a keeper!

Lemon Cake with Lemon Filling and Lemon Butter Frosting

Reviewed: Jun. 4, 2012
The 5 stars is for the lemon filling. I didn't make the other two recipes. But the filling is delicious, nice and tart. It complemented the lemon flavored cake and Marshmallow fondant I made to go with it!

White Almond Wedding Cake

Reviewed: May 30, 2012
This is pretty tasty! I've started making all my baking recipes from scratch but had a box of white cake still in my cupboard, so I thought I'd find a recipe to make it go a little farther. I didn't have enough sourcream so I just used 4oz of creamcheese like someone else had mentioned and also put in a package vanilla pudding (dry mix) and I didn't use almond flavoring, I substituted more vanilla. It is a very moist cake.

Sandy's Chocolate Cake

Reviewed: May 30, 2012
I've made this cake twice now. It is delicious and moist! a bit time consuming but well worth it. I was able to make 3 dozen cupcakes and fill two 6inch square cake pans. The 2nd time I filled four 9 inch round cake pans but if you want thicker layers I'd do three pans.

Fudgy Brownies I

Reviewed: Apr. 6, 2012
These were pretty tasty, I didn't have any boxed brownies in the pantry and I'm trying to start making more recipes from scratch anyway, so I made this into creamcheese brownies. I think next time I'll use brown sugar like some of the other reviewers suggested.

This was odd tasting, not sweet at all and the sourcream topping was gross. the only good part was the toffee and caramel drizzle. I'll keep looking for a pumpkin cheesecake recipe

The Best Chicken Fried Steak

Reviewed: Mar. 3, 2012
This was pretty good. Next time I'll season the steak before dredging in flour and dipping into the batter. I also dipped it twice in the batter for a thicker crust. I made a sausage gravy for the top. I love the hot chili sauce in the batter, it added excellent flavor!

Amish Meatloaf

Reviewed: Jan. 20, 2012
Some of the best meatloaf I've had, it was a little sweet, I think next time I'll leave out the brown sugar all together, I also took other's advice and added some seasonings, sea salt, pepper and garlic powder. put less ketchup in and added worchestershire sauce and a little liquid smoke flavoring. I also put 4 strips of bacon on top and used my homemade bbq sauce with a little bit of mustard mixed in to top it. I cooked it for an hour then turned the broiler on to cook the bacon a bit more, then put the bbq sauce on and broiled a little bit longer.
