Soft and Chewy Peanut Butter Cookies

One Bowl Chocolate Cake III

This is my go-to chocolate cake recipe. It's a classic cake that everyone loves - just the right combination of moist and delicate. I use a chocolate or vanilla icing (the recipe on the back of the confectioner's sugar bag, lol) and it's always a hit. And there's only one bowl to clean! :)

Curried Cashew, Pear, and Grape Salad

Awesome!! I used sunflower seeds instead of cashews and turkey sausage instead of bacon (that's what I had on hand) and boy was it good! This salad has the perfect combination of spicy and tart, soft and crunchy. Even my husband (who isn't exactly a salad lover) went back for seconds. Bravo!! :)

Black Bean and Rice Enchiladas

Healthy and simply delicious! I made mine as a stacked enchilada casserole, since I'm not good at rolling tortillas to look like the picture. I layered 1 layer of tortillas, 1 layer of filling, 1 layer of cheese, and then repeated with the leftover tortillas and some salsa on top. It was spicy, hearty, and went nicely with a white table wine. I will definitely be making this again!

Sweet Italian Chicken Sausage and Tortellini Soup

This left us feeling warm and satisfied. I folled the recipe exactly, except I left out the butter at the end and added some ground pepper, majoram, and basil. I'll definitely be adding this to the regular rotation! :)

Cranberry Nut Granola Bars

The Quaker Oats guy has lost my business! This was easy to make and allows for some fun creativity. I added cinnamon, vanilla, and honey to the mixture and it came out just great. Can't wait to make these again! :)

Popularity Cookies

I just made these... I doubled the recipe so I would have enough for a well-attended Christmas party. I only used 3/4 cup of butter and 3/4 cup of brown sugar and it made the perfect amount. These were so simple and different from regular cookies... I'll certainly be making them more often. Thank you! :)

Bruschetta Chicken Bake

We took the suggestion and made it in a crock pot... mm mm good! The meat was tender and the brushetta added a kick. I used a bit of basalmic vinegar, some fresh basil, and topped it off with Parmesan cheese. Next time we might eat it over spaghetti. Great all-around recipe!

P.J.'s Fresh Corn Salad

Excellent! I just made this and it was simply delicious. The main thing that I changed was adding some turkey kielbasa and feta cheese for my carnivorous husband. It makes a lot, so we look forward to having leftovers this week! :)

Sundried Tomato Basil Pesto Chicken Wrap

Excellent! I used cashews instead of walnuts, because that's all I had in the pantry, and it was a delight. Not only do the flavors blend well, but the textures do too. It's the perfect blend of crunchy and soft, tangy and sweet. Bravo. :)

Unbelievably Easy and Delicious Vegetarian Chili

I've made this twice and it's dynamite! A hit among vegetarians and non-vegetarians alike! The only thing I added was that I crumbled some tortilla chips in the bottom of the bowl before serving to give it a little crunch. I'm definitely going to make this one of my regular dishes!

Strawberry Cream Roll

This one didn't work out for me either. I added cream cheese to the filling like some of the reviews said, and my filling came out lumpy and inconsistent. It didn't roll up well or keep its shape. I'd never made a jelly roll before, so I feel like perhaps I was missing a key piece of information.
