Greek Garbanzo Bean Salad

Reviewed: Aug. 22, 2011
great! Used the kalamata olives, added a can of black beans and a finely diced jalapeno pepper. Also more feta. Not sure if used full half cup of salad dressing just enough to cover everything. Great to make ahead for picnic or pot luck. Made it 2 days in a row.

Garlic Crab Legs

Reviewed: Jul. 4, 2012
Was very good but messy. Forgot how much work crab is to shell. Used 3 large garlic gloves and about 3tbs of old bay for the sause. After simmer used butter for dipping. Also tried not simmering and just using as dipping sause and while not a mess not nearly as good. When boiling the crab I put some garlic and old bay in the water and this didn't seem to add much.

Tomato and Mozzarella Bites

Reviewed: May 29, 2012
Really enjoyed these. I added watermelon. Takes a bit of time to assemble. Did the watermelon and the cheese the day before then added the basil and tomato before serving. Had cut the tomatoes in half and were soaking cut side down in balsamic vinaigrette overnight. Added pepper on the non-presentation side and salted the up side. Big hit-

Roasted Cajun Potatoes

Reviewed: Dec. 13, 2011
enjoy this very much. For 2 used 4 small to med red potatoes and cut to 1/8 inch and cooked for 30 min. Left in at 350 to keep warm for another 20 min and they were pretty crunchy (which I enjoy) but close to being over cooked. Would probably been done in 30 min turning half way through.

Peanut Butter Noodles

Reviewed: Aug. 30, 2011
The ginger and chile paste are a must. Very good! Put over my let over spaghetti. Works best as a side. I have made other recipes before and the sauce was too thin or the sauce never blended correctly. No let down here.

Ground Beef Enchiladas

Tastes great! Used regular onion instead of green, mexican cheese, and then put some rotel tomatoes on top (1/2 can no juice). We both really enjoyed it.

White Chocolate Raspberry Cheesecake

Reviewed: Mar. 18, 2010
Love it! Def taste the ras sauce because I needed to add more sugar. Mild ras flavor, if want more would add ras sauce to the cheesecake. I had a bowl of water in the oven too. I cooked the recommended time and it was very slightly over cooked and cracked slightly on top. Next time will cook 5-10 min less. Husband can't wait until I make again!

No Bake Cookies I

Reviewed: Nov. 27, 2012
Just made these and followed everything exactly, 90 sec once rolling boil. Very easy. The first half worked fine while scooping out but at the end of the batch didn't stick together as well and where falling apart. (I only made 24 not the 36 in the recipe.) While taste good and had all the ingredients on hand not so pretty to look at and crumble easily when eatting- These are very sweet and the crunchy peanut butter is a must.

Butternut Squash Soup with a Kick

Reviewed: Oct. 8, 2012
Overall pretty good. I made with large jalapeno and 1/4 of seeds and it had a bit more then a little kick. In retrospect realized that while I like spicy food I didn't like spicy soup. Was not sure about the sugar so added about 3/4 tbs and it was little sweeter then I like. Can taste the coconut quite a bit but the ginger is sublte, so may add more. Taste is a bit one dimensional I feel like a little acid would be helpful, but haven't figured the best way. Also some garlic might be a nice addition.

Cranberry Nut Bread I

Pretty good. As a bread loaf difficult to cut(starts to crumble). made with 1 1/4 c of cranberries whole. Topped w/ sprinkle of sugar and pumpkin spice which was nice. Nice change for the holiday.

Fresh Mozzarella Pasta Salad

Reviewed: Apr. 13, 2010
Nice light salad perfect for summer. After cooking I rinsed the orzo in cold water and served at room temp. If orzo is still warm the cheese begins to melt and it gets clumpy. Start with 1/2-2/3 of the red pepper then add to taste. I also added a little garlic and pepper as well.

Mexican Rice II

Reviewed: Aug. 24, 2009
Read review- re too much liquid so was concerned but followed as directed and no problem at all. Very easy to make. Overall quite good will make again. In the future would cut back the oil by 25%and maybe add finely chopped green pepper and add some heat. PS use low sodium broth or too salty.

The Ultimate Chili

Reviewed: Sep. 24, 2009
Very easy and really enjoyed it. Did use a mix of beans and slightly increased the vegs. Did add some tobacco. At the end a bit soupy so keep the lid off the last hr and that did the trick. This is NOT a spicy chilly and has a bit of a sweet touch with good depth of flavor. The wine does really make it. If looking for spicy, I don't think trying to spice this up hot would work very well with the tough of sweetness and wine.

Apricot-Glazed Pork Chops

Reviewed: Apr. 11, 2013
Very easy and only need a few things. We really liked the sauce. I cooked it to an internal temp of 140 and it was over cooked. This is one of the best preps for pork chops I have had.
