Quick Sesame Green Beans

I blanched over very high heat them added some water put the lid on to steam. Once almost done- added the ingredients to beans and heat just until the garlic fragrant.

Fresh Mozzarella Pasta Salad

Nice light salad perfect for summer. After cooking I rinsed the orzo in cold water and served at room temp. If orzo is still warm the cheese begins to melt and it gets clumpy. Start with 1/2-2/3 of the red pepper then add to taste. I also added a little garlic and pepper as well.

White Chocolate Raspberry Cheesecake

Love it! Def taste the ras sauce because I needed to add more sugar. Mild ras flavor, if want more would add ras sauce to the cheesecake. I had a bowl of water in the oven too. I cooked the recommended time and it was very slightly over cooked and cracked slightly on top. Next time will cook 5-10 min less. Husband can't wait until I make again!

The Ultimate Chili

Very easy and really enjoyed it. Did use a mix of beans and slightly increased the vegs. Did add some tobacco. At the end a bit soupy so keep the lid off the last hr and that did the trick. This is NOT a spicy chilly and has a bit of a sweet touch with good depth of flavor. The wine does really make it. If looking for spicy, I don't think trying to spice this up hot would work very well with the tough of sweetness and wine.

Mexican Rice II

Read review- re too much liquid so was concerned but followed as directed and no problem at all. Very easy to make. Overall quite good will make again. In the future would cut back the oil by 25%and maybe add finely chopped green pepper and add some heat. PS use low sodium broth or too salty.

Sour Cream Enchiladas

Quite tasty. Followed recipe-used rotisserie chicken which worked well. Added some hot sauce to the sour cream mixture as well as some jarred jalapenos. Even with the above alteration had mild spice. Will make again but would use jalapenos instead of the green chilies to add more spice.
