Turkey and Quinoa Meatloaf

Great meatloaf!! Cooked the quinoa in chicken broth, added minced garlic and onion powder to the quinoa at the end of cooking time (instead of cooking them separately)and used about 1/2 the Tabasco. Very flavorful and much healthier than regular meatloaf. I didn't even bother with the glaze. I will make this again!

Peanut Butter Cup Cookies

Great cookies! I made as written and yielded 32 cookies out of the batch using my small pampered chef scoop. I used disposable mini foil baking cups on a cookie sheet and froze the peanut butter cups for a bit. I swapped rolos for pb cups in a few of the cookies per one sons' request. Santa will be quite pleased with these tonight!

Grilled Fish Steaks

Really Good!! May even make fish eaters out of my family. Used cilantro instead of basil/parsley (personal preference) and I will use a little less salt next time. Not sure if marinating for 2+ hours added to the saltiness (and I LOVE salt). Highly recommend -- the marinade takes the fish smell away for those of you who don't care for fish, either :-) I used haddock in a grill "basket" but wouldn't hesitate to use another white fish next time. And there will definitely be a next time!

Chocolate Wave Zucchini Bread

I've made this twice and it was devoured each time by kids -- they have no idea they're eating zucchini! I made it a little healthier by using egg substitute and Promise (butter substitute) for the shortening. I did not add the walnuts for allergy reasons. Highly recommend this recipe!

Slow Cooker Chicken Stroganoff

Everyone had seconds, even my 6 and 7 year old sons! I used Zesty Italian dressing, healthy request cream of celery (instead of chicken) which I added at the beginning with some leftover chicken broth and only used 1/3 the cream cheese at the end. I did not use butter/margarine but sprayed butter flavored cooking spray in the crockpot before adding anything. I trimmed the chicken breasts but did not cube them -- shredded them with two forks at the end. Definitely a keeper at our house!
