Easiest, Amazing Guacamole
All recipes strikes again! Thank you, thank you! Thank you for this basic recipe and all the comments. I have always wanted to make my own guacamole but thought I would have to invest in ingredients that I would have no other use for. So I would buy the packaged powder guacomole mixes and add the avocados or would buy it already prepared in the store. I had no idea it could be this simple. I used avocados, lime juice, fresh garlic, salt and onion powder. It was perfect! And I loved the "pit" tip. Happy Cinqo de Mayo!

Prune and Olive Chicken
My daughter wanted a homemade Mediterranean dinner for her birthday. All I knew about Mediterranean was hummus and couscous, so I turned to allrecipes for help and found this. FABULOUS! Everyone loved it and the birthday girl was very happy. We served it with couscous and roasted artichoke hearts (frozen bag) drizzled with balsamic vinegar & a bit of olive oil, salt & pepper. To tie the artichokes in with the main dish, I threw in a few handfuls of golden raisins for the last 10 minutes of roasting. When storing the leftovers, we put the artichokes right in with the chicken and that was very tasty too. And instead of birthday cake, she had Baklava (again from allrecipes). Thank you, Theresa for this recipe and to Neonwillie for the Baklava. Thanks to allrecipes and you, I was able to make my daughter's special day that much better.

Smashed Cauliflower
Thanks to all you tipsters for the warning about being runny. After cooking, I drained the liquid into a bowl and gradually added a small amount of it after mashing the cauliflower and cheese. Still did not have the right consistency, so I threw in a large handful of potato flakes-that did the trick!
