Flan de Coco (Coconut Flan)

The only reason I didn't give it 5 starts is I'm not sure what a flan should taste like! However, I really enjoyed this recipe. Something I learned from other flan recipes is to turn finished flan onto serving plate; I had no idea you were supposed to do that as this recipe assumes you know. Very tasty though.

Sea Foam III

This is not sea foam, and this is why I rated it 1 star. It is divinity. It is ok as a divinity recipe, BUT if you are looking for SEA FOAM, look at a different one.

Spinach-Cheese Swirls

I added just a little salt and pepper to the spinach after draining it, and that helped bring out the flavor of the spinach a little. I only used enough to lightly cover the pastry, otherwise it's hard to roll. The cheese is not supposed to be overpowering, but compliment the spinach, so I like the Muenster. Relatively quick, very easy recipe, everyone really liked them. Also, I had a can of biscuits and some left-over filling, put the biscuits in the bottom and sides of a muffin tin, filled with filling, and everyone really loved them. Good breakfast idea.

Easy Asian Quiche

This wasn't bad, but we didn't exactly like it. It may have been the cheese; it just didn't taste that Asian to us, which was what we were looking forward to. That being said, it wasn't that bad, and would be worth a try.

Seafood Pot Pie

My kids and I really liked the flavor. The problem with it being runny was that it's made in a pan, but the consistency was typical for a pot pie. I think next time I will divide the pastry into ramekins to solve that issue. Good for those that like seafood, why would you even attempt it if you don't like a 'fishy' taste? I didn't want to cover the flavor, it was really good as written.

Restaurant Style Egg Drop Soup

Burrito Pie

The kids like it with regular tomatoes, not hot ones. It makes it a little blander, but that can be adjusted a little with the taco sauce. This is a staple in my house: there are five of us, and this makes quite a bit.

Very easy, my kids absolutely love them. The sauce makes a difference, make sure you use one you like. The dough loses something when you reheat left-overs, but the insides are still very good.

Artichoke Stuffed Mushrooms

Mimi's Giant Whole-Wheat Banana-Strawberry Muffins

For whole wheat, they were pretty good. Obviously not as light as regular muffins; my family said they were good, but wanted my 'other ones' next time. Great if you're on a diet though.

Scottish Shortbread IV

I only had one cup wheat flour, and two cups white in the house. I had to just pat it out, as it ended up too soft to roll. I mixed with a dough hook in my mixer instead of kneading it. They turned out very nice. They did get soft after a while of sitting out, but I'm not sure if that was because of the flour... they were wonderful right after cooling.

Perfect is correct! Recipe didn't need any fiddling, they turned out wonderful first try. I like mine a little more toasted, so I may make them smaller next time, but they were still wonderful tasting.

Followed the advice of other reviewers, and used almonds and slightly less bread crumbs. I got compliments on them from a men's league. That, and the ease of the recipe, makes it a five star recipe.
