Coconut Curry Chicken

Omg, this is SOOOO good! And, it looks really pretty! I added a small can of pineapple, a red pepper and some chopped carrots; it was wonderful! I made this for my most opinionated and discerning friend and all he could do was rave....this is definitely a keeper.

Homemade Black Bean Veggie Burgers

These are okay...could use a little something. I followed exactly plus added some chopped jalapenos. They didn't fall apart, the texture was fine but they were just a bit boring.

Pumpkin Black Bean Soup

So good! But it definitely needs a little doctoring up; I added an extra can of whole black beans and a can of corn. I also added cumin, 2 jalapenos, cayenne, garlic salt and garlic powder. Also the tomatoes I added were "red pepper tomatoes". Delish!!!!

Best Carrot Cake Ever

This cake is SO moist and SO delicious! And I don't even really like carrot cake! However, it's my mom's favorite so I made this recipe (sans raisins) for her 60th birthday party and it was a HIT! Everyone raved about it and wanted to know how I'd gotten it so moist....must've been the pineapple! My only tip is to make sure you strain the carrots really well in cheesecloth. Oh, and I used baby carrots.

Mom's Zucchini Bread

Very good! I made only a few changes (my attempt to make it healthier) - used wheat flour instead of white, substituted applesauce for half of the oil, used brown sugar and added some cloves. also, I think I probably used about 3 cups of zucchini. This recipe made one loaf and 9 muffins...mmmm!

Best Chocolate Chip Cookies

Very YUMMY cookie!!! The only changes I made were to add the cream of tartar, per another reviewers suggestion, and used 1/2 milk chocolate chips and 1/2 semi sweet chunks....DELISH!!! I got rave reviews when I brought these to my friends' full house for Thanksgiving. Thanks Dora!

Corn and Cheddar Chowder

This is so good!!! I added about 1/2 cup of wine but didn't have the parsley or chives so I added some dried oregano and a little basil instead. Also, added some minced garlic to the onion and potato mixture as well as some grond white pepper. YUMMY! This is a great, interesting recipe....definitely a keeper!

Mom's Chocolate Chip Cookies

These are very soft cookies; I have to be honest, I didn't love this recipe. But, I made these cookies for some very, VERY picky friends who absolutely raved about them! RAVED...like, ate the entire batch in less than 24 hours. So I guess if you prefer a super soft cookie then this is your recipe!

Yummy! I did actually tweak it a bit though- added about 2 tblsp. apple cider vinegar, 1 serrano pepper, and used one small red onion and one small white onion instead of the green onions.

Broccoli Cheese Soup V

This soup is DELISH! I cut it down by about 1/3 since I'm only cooking for two. I did make only a few minor changes: I didn't have chicken broth so I used mostly beef broth and then added some water and chicken boullion; I added some minced garlic to the onions; and added about 1 cup of 2% cheddar. Also, I used the lowfat (2% milk) velveeta and skim milk and it was still very thick and creamy! My boyfriend went back for seconds and plans on having it for dinner as well :)
