Boston Brown Bread III

We live in North Carolina. I am a native, however my wife is born and bred from Mass. She raves about canned brown bread all the time so I decided to try and appease her innerchild a little. She found the texture to be slightly tougher, however the taste was a duplicate of her memories. She was somewhat disappointed because all she can think about is how moist the bread was once it came out of the can, however I explained to her that inside is what matters most because it was being made in a can and the can is what made it moist! Some things can be duplicated, but alas not everything. Pleased overall, but had to throw much of it to the birds who now are diabetic from this extremely sugary bread treat. lol

Creamy Au Gratin Potatoes

found this particular recipe to be on the greasy side due to the liquids from the cheese. To compensate and add additional texture to the dish I added breadcrumbs and baked for an additional 15 minutes. I feel that this would be better with a ritz cracker topping but alas, the cupboard was bare. Great taste otherwise.

The Best Banana Bread

A simple recipe to follow. I made some alterations for a creamier bread. I subsituted 1/2 of the butter it called for with cream cheese and added 1 jar of cinnamon applesauce for additional flavor. I compensated for the extra sauciness by adding extra flour for thickening purposes. Both loaves were gone within 2 hours! Will definitely make this one again.
